Making the crumble with rolled oats of any cut, unsweetened coconut, flour and browned sugar lightly packed.
This is a tasty dessert and only a few simple ingredients.
Get the partridgeberry filling made and let it come to a total room temperature or even make it over night!
Cook partridgeberries on a medium heat stirring occasionally until the berries have reduced and thickened.
Follow those stages to get the same results and then pour the filling into a mason jar or bowl to totally cool down.

Ingredients
- Partridgeberries - 2½ cups, fresh or frozen
- Water - ½ cup
- Sugar - ½ cup, more if needed
- Lemon Juice - ½ to 1 tsp
- Crumble Mixture:
- Rolled oats - 1½ cups
- Flour - 1½ cups
- Unsweetened coconut - ½ cup, extra to toast
- Brown sugar - 1 cup, lightly packed
- Baking powder - 1 tsp
- Butter or margarine - 1 cup, cubed
Instructions
Preheat oven to 350°F - lightly grease your 9 x 9 inch pan, or line with parchment paper
Making your filling, in a medium saucepan, add partridgeberries, sugar, lemon juice and water. Start the pot boiling on medium heat, stir occasionally for about 15 minutes or until partridgeberries are thickened, then remove from heat. Let come to room temperature before using or make earlier in the day.
Making your crumble, in a large bowl, add rolled oats, flour, brown sugar, unsweetened coconut, baking powder, toss together then cube butter into mixture. Mix all ingredients together with your hand, processor or pastry cutter until all is evenly incorporated together and crumble.
Prepare your 9 x 9 inch pan with a sheet of parchment paper, then start by sprinkling ½ of your crumble mixture on the bottom layer of your pan or a little more about 1/3 inch thick, press the crumble mixture down on this layer.
Then take partridgeberry filling and put on top of your crumbles, spread evenly over your crumble mixture.
Next step sprinkle another layer of crumbled mixture over the top of the partridgeberry filling. Don't press this layer down just sprinkle over the top.
Bake your partridgeberry crumbles in a preheated oven for 30 to 40 minutes or until golden brown. Remove from heat, let totally cool before cutting into 2 x 2 inch squares.
Bonita’s Tips:
Use cranberries if you don’t have access to partridgeberries, they are from the same family of sour berries. ( You can also buy store made partridgeberry jam )
Add more sugar to partridgeberry jam if to sour.
Using parchment paper will be easier to remove partridgeberry crumbles from pan to cut in squares.
Another way to serve them, by cutting the partridgeberry crumble bigger. Top with whipped cream and tossed toasted coconut. Plus fresh fruit!

After you make the crumble mixture spread half of it on the parchment paper and then keep the other half for the top. Spread the partridgeberry filling over the crumbles then top with the rest.
After the partridgeberry crumbles are baked let them come to a total room temperature before cutting them into 2 x 2 squares or whatever you like.
