Partridgeberry Meringue Dessert

If you are looking for a delicious dessert for a special occasion you are in the right place.
I'm using partridgeberry jam in this recipe because partridgeberries are very sour and the sweetness of the jam will make this recipe amazing. Use another jam if you don't have access to partridgeberry jam.
After all the steps are done to make your batter, grease a pan of choice. I'm using a clear one so you can see the layers.

Ingredients
- Butter or margarine - 4 tbsp
- Sugar - ¼ cup
- Egg yolks - 2 each
- All- purpose flour - ¾ cup
- Baking powder - 1 tsp
- Sea salt - ¼ tsp
- Evaporated Milk - ¼ cup or milk of choice
- Vanilla - ¼ tsp
- Meringue:
- Sugar - ¼ cup
- Egg whites - 2 each
- Partridgeberry jam - 1 cup or more
Instructions
BOTTOM:
In a bowl, mix together melted butter, flour, sugar, sea salt and baking powder until combined. Separate two eggs in two bowls.
Then in a small bowl whisk egg yolk, milk and vanilla together and add to other mixture and continue mixing together until combined.
Preheat the oven to 350ºF and set timer for 18 to 20 minutes, grease square pan and add bottom mixture. Flatten down and place in oven.
TOPPING:
In another bowl add egg whites, mix with high speed blender until it foams. Then add sugar and sea salt…Continue blending together for a minute or two.
When bottom cake is ready remove from oven and top with partridgeberry jam and scoop meringue over top and spread out.
Place back in the oven for another 20 minutes or until golden brown. When ready remove from oven.
Serve hot or cold! Serve with whipped cream or thick cream.
Bonita’s Tips:
Room temperature eggs for twenty minutes, before whipping egg whites.
Use room temperature jam, you can use cranberries sauce or jam.

This is a dessert I like making when I’m expecting company to have with a nice cup of tea. Not a lot of ingredients and I’m using partridgeberry jam but you use a jam you like.
