Ingredients
- PEACH FILLING:
- Peaches - 3 cups chopped or more, fresh or frozen
- White sugar - 1 cup
- Lemon Juice - 1 tsp or more
- Lemon zest - 1/2 tsp or more
- Crumble crust:
- Flour - 2 cups or choice
- White Sugar - 3/4 cup
- Baking powder - 1 tsp
- Coconut - 2 cups
- Melted Butter - 1 cup
Instructions
Peach Filling:
In a medium saucepan add all ingredients except the zest, and start to cook on a low heat.
After peaches are cooked and combined, remove from heat and let cool.
Then spread evenly with your peach mixture over bottom crust layer.
Top with the other half of your crumbles mixture, DON’T PRESS DOWN.
Bake in a 350º oven for 30 minutes, don’t over bake. ( LIGHT BAKE ON CRUMBLES )
Let cool, then remove from pan by pulling up the parchment paper from each side, place on the counter.
Cut with sharp knife 2” apart into squares or bigger.
Serve for dessert with a topping or without.
CRUMBLES:
Mix the first four ingredients together in a bowl.
Then add melted butter, mix together.
Divide mixture in half.
You will need a square pan line with parchment paper, and put half the mixture in the bottom and press down.
Cover evenly with your peach mixture. ( see above for method )

Lemon is used in this dessert for a citrus balance to the sweet filling, but we are only using 1 cup of sugar to 3 to 4 cups of chopped peaches. You can use less sugar or a low sugar, anyway you make these you will love them. If you can’t find fresh peaches in the fall or winter months you can use frozen that will work great. Just add them to the saucepan and start to cook while they are frozen, also this filling is really a jam and if you wish to make some for your toast or tea buns just boil some up using this same method and enjoy.
