Peas Soup from Leftovers

Here in Newfoundland and Labrador we have a cooked meal called JIGGS DINNER, Traditional Newfoundland Jiggs Dinner
This is a meal made up of salt beef, cabbage, carrot, turnip and potatoes. We usually have this meal on SUNDAY'S or at CHRISTMAS TIME, I shared a link for you to check out and then you will see what i'm talking about. To continue on to our main recipe PEAS SOUP from Leftovers. After Sunday we call the JIGGS DINNER, leftovers and we make a few different meals from it. Another one is called COULDN'TS. Traditional Newfoundland Couldn'ts also called hash.
Then we leave some veggies and the peas pudding and salt beef to make PEAS SOUP.

Here in Newfoundland and Labrador we don't waste food and any time we make a meal we can get more then one from it. Years ago when our elders would have a JIGGS DINNER or BOILED DINNER they would have enough potatoes to make a potato salad call COLD PLATE, Traditional Newfoundland Cold Plates

Ingredients
- Cooked peas pudding - 4 cups or less
- Vegetable Broth - 6 cups
- Cooked potatoes - 3 each
- Cooked turnip - 2 slices
- Cooked carrot - 2 each
- Salt beef or pork - 1 or 2
Instructions
METHOD:
Start by chopping up all leftovers in small soup size pieces, then chopped a small onion in little piece.
Pour broth into boiler and start to boil, then add in 4 to 6 cups of cooked peas pudding, more if you have it.
Then stir until its creamy and add onion to start to cook before adding all vegetables and meat.
Cook on a medium heat, add pepper to taste and salt if needed.
Cook for 20 minutes to 1/2 hour then make doughboys and add to boiler, follow recipe below.
Doughboys recipe:
1 1/2 cups flour
1/4 cup butter
2 teaspoons baking powder
1 teaspoon salt
1 cup cold water or milk
Doughboys method:
-Cut butter into small pieces then add to flour, baking powder and salt. Add water or milk to make a soft dough. Drop a teaspoonful into soup, cover pot tightly and cook for 5 minutes.
Serve soup hot and topped with a little butter on top.

I’m sure you have enjoyed our recipe method so far, this is a lovely soup and one our son’s love to have. Every time I visit our son’s I be sure to bring with me a pack of yellow split peas to make them a boiler of peas soup and doughboys. But the peas soup from the split peas are made different then the leftover peas soup. I will share with you our link to that recipe and it is equally as delicious. Hi Pauline: Thank you so much for your lovely message and I’m so glad to help. When we lived away a few years ago for over thirty years I would long for our homemade recipes that my mom and dad made for us years ago. I would call my mom and she would read the recipe over the phone that cost hundreds of dollars in phone calls with no phone plan. Plus she would leave out a few of the ingredients and it turned out wrong. So after we retired from our full-time jobs in the NWT we started Bonita’s Kitchen and we have been trying to find and make all the recipes that we missed and loved from years ago. Now, I am wondering if you have a recipe for baked leftover peas pudding. My Aunt always made this and now she has passed away. My brother loved it..I would like to find a recipe and make it for him. He will be turning 80 years old next month.

I’m getting readyto make our Jiggs dinner for Christmas. I have always made hash (couldn’ts) the next day and all the crowd comes for that too. Just as good as the main meal in my opinion. I still always end up with additional peas pudding left. I never thought about making peas soup. Great idea. Thanks. Now I’m looking forward to that as well.
