I'm using all-purpose white flour, dry traditional yeast, melted butter, sea salt, warm milk and water and white sugar.
I like to proof all yeast before adding it to my dry ingredients because!
If you add it to the mixture and it don't rise now you are wondering what happened and this way you know the yeast is good to go!
After all ingredients are mixed together form into a nice round ball of dough and blessing the dough is optional. But years ago our elders would always bless their dough to help it rise better. I do the same because why change something that works......
Cut the dough in one of three ways, 6 pieces, 8 pieces or 10 pieces depending on how big you like your bagels.
After you make the round dough pieces, you will need to dip them in hot water for about a minute to blanch them before getting them ready to bake.

Ingredients
- All- purpose white flour - 3½ cups
- Active Dry Yeast or Fast Rising - 1½ or traditional
- White sugar - 1 tbsp
- Butter or margarine - 2 tbsp and extra for dough
- Warm milk - 1¼ cups
- Warm water - 2 tbsp, more if needed
- Sea salt - 1 tsp
Instructions
In a large bowl, add all dry ingredients and toss together, then make a whole in the middle of mixture. Keep ½ cup of flour to bring the mixture together.
In a small bowl add warm milk, sugar and yeast, let proof for 5 minutes.
Then pour warm proof yeast in the large bowl with dry ingredients in the middle. Add warm melted butter, keep about a teaspoonful to use later. Then gradually mix with a wooden scoop or mixer with a hook, pulling in the dry ingredients until all combined.
Add more warm milk or warm water if needed and use the extra flour to bring the dough together and form into a ball.
Kneading dough and pulling it together by hand to form that ball. Until it got a soft texture and electric touch when pulled up.
This will take about 5 to 10 minutes or so and then rub the extra butter over the dough and cover with a dish towel and keep in a warm place in your kitchen.
I usually use the oven, putting the LIGHT on only and putting the timer on for 30 minutes to let the dough double in size.
Then remove the dish towel and cut the dough into 6 to 8 pieces. Rolling them in a ball and forming them into a ring. With a bagel cutter or use your fingers.
By poking a hole in the middle and rolling your finger around to extend the hold more.
Place on your counter top or board and let rise for another 15 minutes.
“Then while waiting for the bagels to rise, add water to a saucepan and bring to a boil. Then after reducing heat to a simmer. With a spatula with holes lower the bagels one at a time up to three in the water until they float.”
This will take about a minute then flip over to the other side and do the same. Remove from water by spatula with holes to drain on a rack.
Then line a baking pan with parchment paper or grease pan, add blanched bagels to the pan.
Preheat the oven to 375ºf and bake for 20 to 30 minutes, or until the internal temperature is 190ºf and golden brown. Remove from the oven and let cool on a wire rack and cut in half, toast, add butter and jam…..enjoy!
Bonita’s Tips:
If using mixer with hook it will take less time mixing, remove hook after all mixed and use hands to knead dough and forming into a ball.
