PLAIN ROCKS - Cookies
Hi welcome to our website!
Today's recipe is a viewers pick!
Plus it's a recipe belonging to her Mom!!
It's called PLAIN ROCKS!!
Only a few simple ingredient's and you may have most of them in your home right now!!
I'm not sure why she called them PLAIN ROCKS but being from Newfoundland and Labrador I know first hand that we have lot's of plain rocks on shore and in the hills.
So maybe she just liked the sound of that.
The cookies also got a rugged look to them like our rocks here in NL!!!
First mix together the butter and sugar of choice.
We hope you are still interested in our viewers pick recipe this week, please continue on to the posted below. Also check out this link to our cookbooks and leave us a message.
Ingredients
- Butter - 3/8 cup = 6 tbsp
- Egg - 1 large
- Vanilla extract - 1 tsp
- Evaporated milk - 3 tbsp, or milk of choice
- Brown sugar - ½ cup, or sugar of choice
- All-purpose flour - 1½ cups
- Baking powder - 2 tsp
- Chopped walnut - ¼ cup
- Chopped dates - ½ cup, or raisins
Instructions
In a bowl cream together butter and sugar until soft.
Add large egg to a small bowl first, then add to creamed butter and sugar. Beat well!!
Add chopped dates or raisins, nuts and vanilla. Mix a few times so it combines in well.
Sift in flour, and evaporated milk or milk of choice, mix until it got a stiff dough so the rock cookies hold their shape.
Line your cookie sheet with a piece of parchment paper, then drop one teaspoon sizes of the dough to the pan. This recipe makes around 28 small cookies.
Preheat oven to 350ºF and bake cookies for 15 minutes or until baked.
Remove from oven and put on a cooling rack to cool before removing them from the parchment paper.
Bonita’s Notes:
This recipe is by one of our viewers mom from NL, she told me her mom was a fabulous cook and baker and she wanted to share her recipe with us to share with all of our viewers.
These cookies may have other names and I was told they are from the 1930’s around World War 11 time.
She gave them a two thumbs up and I’m giving them two thumbs up because of the taste and simple ingredients we love to share.
Thank you Jackie for sharing your moms recipe with us!!!
