Pot Roast
This Pot Roast is a recipe from the kidney community cookbook and it is so delicious, this is renal diet friendly. Bonita's Kitchen was asked by the Trina Ralph the Executive Director for the Kidney Foundation of Canada , Atlantic Branch to make a recipe from their Kidney Community Cookbook and video it to post for World Kidney Day and International Woman's Day and I picked this delicious Pot Roast . Trina joined me to create this amazing Pot Roast with simple steps to a full balanced meal for you and your family.
We made this delicious meal from start to finish so you can have a video plus recipe thats made with healthy choices in mind. I can't say enough wonderful things about this hearty pot roast made with simple ingredients. Whats so lovely about this meal you can start it in the frying pan and continue cooking it in your slow cooker, this is a plus when it come to making a meal that you will love.
When you start frying the chucks of roast in a little vegetable oil and then let the beef sauté until its a golden brown, then add your herbs and onions. Cooking them together will enhance the flavours to build a delicious base for your pot roast.
After you got the roast chucks and onions fried together you will add the garlic then the water, you don't want the garlic to burn it will change the taste of your pot roast. Then adding in your turnips to simmer for 3 hours until the roast and turnip is nice and tender.
This is a pot roast so if you like you can cook it 3 different ways, simmering on the stove top, simmering in the slow cooker or simmering it in the oven. Whatever is the easies way for you to cook your pot roast is the one you can use.

Ingredients
- Boneless beef chuck or rump roast - 2 pound
- Vegetable Oil - 2 Tbsp
- Onion - 1/2 Cup chopped
- Garlic Cloves - 3 minced
- Turnip or Rutabaga - 1 Cup
- Thyme - 1 Tsp dried
- Oregano - 1 Tsp dried
- Water - 2 Cups
- Carrots - 1/2 Cup
- Cornstarch - 3 Tbsp
- Water for cornstarch - 3 Tbsp
Instructions
Method:
- Brown meat on all sides in the oil.
- Add onions, cover and cook on low heat for 15 minutes.
- Add garlic, rutabagas, herb seasoning and 2 cups of water.
- Cover tightly and simmer 3 1/2 to 4 hours, until the meat is tender.
- Thirty minutes before the pot roast is ready, mix the cornstarch and cold water in a small bowl.
- Add 1/2 cup of hot liquid from the pot to the cornstarch mixture to form a slurry.
- Then add the mixture back into the pot and stir.
- Add the carrots and cook for an additional 30 minutes.
Brown meat on all sides in the oil.
