Ingredients
- Flour - 1-3/4 cups, leave 1/4 cup to roll dough
- Baking powder - 4 tsp
- Butter or margarine - 3 tbsp
- Cooked potatoes - 3 medium, 1 cup mashed
- Evaporated Milk - 1/2 cup
- Sea salt - 1/2 tsp
Instructions
- PEEL AND BOIL POTATOES WITH A PINCH OF SEA SALT 4 MEDIUM POTATOES, MASH AND LEAVE AT ROOM TEMPERATURE.
- IN A BOWL ADD 3 TBSP BUTTER, MASHED POTATOES AND EVAPORATED MILK, MIX TOGETHER.
- THEN SIFT IN THE DRY INGREDIENTS, FOLD TOGETHER TO FORM A BALL.
- PUT OUT ON YOUR COUNTER TOP WITH SOME FLOUR, ROLL TO 1/2” INCH AND WITH A COOKIE CUTTER OR GLASS, CUT OUT 12 ROUND BISCUITS ABOUT 2 1/2” INCHES.
- PRE-HEAT OVEN TO 400º
- BAKE POTATO BISCUITS FOR 15-20 MINUTES OR UNTIL GOLDEN BROWN.
- SERVE WITH MEAL OR ANY TYPE OF JAM OR JELLY.

I don’t have evaporated milk, will regular milk or cream work? Which is best.
Hi Emy: Thank you for your message and for stopping by, thats ok if you haven’t got evaporated milk you can use regular milk 2% or whole. Just add the milk a little at a time because it may be to much or wet, if so add more flour. This is a lovely recipe and easy to make, let the potatoes cool in the fridge or counter before working the dough and it will form better. ENJOY and STAY SAFE. 🙂 Bonita
