So don't forget to keep some of your mashed potatoes for your supper to make this recipe...If not toss a couple of potatoes into some water and sea salt and cook until tender, then mash them.
After you cut all the potato dumplings, add water and sea salt to a saucepan and when it starts to boil add half of the potato dumplings let cook for 8 minutes. Then toss them into a bowl until you cook the other half.

Ingredients
- Mashed potato - 1 cup
- Egg - 1 large
- All-Purpose flour - 1¼ cup
- Butter or margarine - ¼ cup plus 2 tbsp for frying
- Italian crumbs - ¼ cup
- Sea salt - ½ to 1 tsp
Instructions
Divide the dough into 4 equal parts. Roll out 1 part on a floured board to make a thin 'sausage' about 12" long, then cut into about ½" pieces.
Boil these for a full 8 minutes in well salted water around ½ to 1 tsp,
then remove to a bowl and coat with some ¼ cup melted butter.
Repeat for all 4 portions. When cooled I then store one-meal portions in ziplock bags or vacuum seal and freeze for future use.
Once thawed I like to serve them sautéed in butter and plain or Italian seasoned bread crumbs what suit your tastes.
