Ingredients
- Pumpkin Filling - 1 cup, freshly made or canned
- Brown sugar - ¾ cup, packed
- Walnuts - ½ cup, chopped
- All-Purpose Flour - 2½ cups, sifted
- Baking soda - 1 tsp
- Baking powder - 1½ tsp
- Orange Juice - ¼ cup
- Butter or margarine - ½ cup
- Pumpkin spice - 2 - 3 tsp
- Sea salt - ½ tsp
- Eggs - 2 large
Instructions
METHOD:
•Preheat oven to 350ºF and bake for 45 to 60 minutes or less depending on your oven, check at the 45 minute mark.

•In a large bowl add butter and brown sugar, cream together.
•Then add eggs into a small bowl mix, add pumpkin filling with pumpkin spice and orange juice, fold together with your wet ingredients..
•Shift in flour, baking powder, baking soda, sea salt continue to fold together, add crushed walnuts, keeping some for top of dough, then prepare loaf pan with butter and parchment paper.
•Scoop pumpkin mixture in loaf pan, top with extra walnuts.
•Bake in a 350ºF oven for 45 to 60 minutes, or until baked then poke with knife to make sure its baked.
•After baked place on cooling rack for 5 minutes, then remove from pan.
BAKING TIPS:
•Shifted flour is like a cake flour and loosens flour nice for baking.
•Check pumpkin bread at 45 minutes mark, if not baked leave for another 5 to 10 minutes.
. Pumpkin spice ingredients are, cinnamon, cloves, ginger, allspice, nutmeg.
