PUMPKIN SPICE CAKE

This time of the year is when I crave " Pumpkin spice cake" it's the taste of cinnamon and ginger that reminds me of the fall of the year!
If you are looking for a delightful cake and recipe you are in the right place.....
Spice's and pumpkin puree and a few tasty ingredients you will have the best cake ever......
If you like extra spices to your cake just add it, this is a lovely cake for any occasion.

Ingredients
- Pumpkin puree - 1 cup
- Brown sugar - 1 cup
- Butter or margarine - ½ cup
- All-Purpose Flour - 3 cups
- Baking powder - 2 tsp
- Baking soda - 2 tsp
- Ground ginger - 3½ tsp
- Ground cinnamon - 3 tsp
- Nutmeg - ¼ tsp
- Allspice - ½ tsp
- Molasses - 1 cup
- Eggs - 3 large
- Warm milk - 2 cups
Instructions
In a large bowl, sift in all dry ingredients.
In a medium saucepan add molasses, brown sugar and butter, warm on the stove top just until it's runny….don’t cook.
Remove from heat and add pumpkin puree and mix together, then slowly add to sifted dry ingredients mixing together quickly until all combined and a runny paste.
Then add to a small bowl eggs and whisk lightly, after pouring into mixture until observed.
After adding warm milk and continue mixing and folding all mixture together until completely combined..
Grease a ring pan or bundt pan with butter and pour all mixture into the pan, preheat the oven to 350ºF and bake the cake for 45 to 55 minutes, depending on your oven.
Remove from heat and place the pan on a cooling rack, cover with a towel and let come to room temperature for 15 to 20 minutes before dumping the cake out on the cooking rack.
Cream Cheese Frosting
Ingredients:
1 8oz pack, cream cheese ½ Cup, butter or margarine
1 Tsp, vanilla 3 Cup, powdered icing sugar
1 tsp ground ginger
Method for Frosting:
In a medium bowl, beat together room temperature cream cheese, then add butter.
After mixing in vanilla and ground ginger, slowly beat in powdered icing sugar with a blender until all combined.

The colours, fresh smell of berries, spices used in baking and pumpkin everything!
Let cake rest in pan and on a cooling rack for 15 to 20 minutes….this after run a knife around the cake to release cake and flip out unto the cooling rack to cool to room temperature.
You can serve this cake warm with a dusting of confectioners sugar and a dollop of cream cheese frosting….Or let it cool totally and put frosting over all the cake or just to top.
