On a medium heat add all ingredients to a saucepan and start the boil until it starts to thicken and got a silky raisin filling.
Now! Let make the batter.

Use a wooden spoon or mixer the blend ingredients together.
Spread the batter out thinly on to a 9 x 13 inch pan or pan of choice, then bake in a pre-heated oven of 350ºF for 20 to 30 minutes depending on your oven.

Ingredients
- BATTER:
- All-Purpose Flour - 1½ cups
- Butter or margarine - ½ cup
- Egg - 1 large
- Water - ¼ cup
- Milk - ¼ cup
- Sugar - ½ cup
- Baking powder - 2 tsp
- Vanilla - 1 tsp
- RAISIN FILLING:
- Raisins - 2 cups
- Brown sugar - 3/4 cup
- Flour - 2 tbsp
- Water - 1/2 cup
- Fresh lemon juice - 1/4 tsp and zest
- Butter or margarine - 1/2 tbsp
Instructions
Method for Batter:
In a bowl add butter, sugar and vanilla cream together.
Then add egg, milk and water fold together and sift in flour and baking powder, mix together.
Then line a 9 x 13 inch pan with parchment paper and add batter and spread out, pre-heat oven to 350ºF and bake cake for 20 to 30 minutes or until golden brown and done.
Remove from oven let cool in pan before removing for pan with parchment paper, after cut sides to clean up brown edges.
Then cut in half and on one side add raisins filling and smooth out, then place other half of cake on top, with the brown side up, cut into sizes you like to have.
Store in tuber ware container with lid, in fridge or room temp until eaten.
Method for Raisin Filling:
In a saucepan on a medium heat add all ingredients and cook until all ingredients starts to thicken, then remove from heat and let come to room temperature.
Allergens
If you use a longer pan your raisin squares would be smaller but I love this size of a square.
After cake is at room temperature cut cake in half and one side add raisin filling and the other side flip over on to raisin filling.
Just look at this lovely raisin filling you can almost just eat the filling on its own…..Now flip the other cake side over with the golden brown side up….
WOW!
