Rhubarb and Pineapple Chicken

Ingredients
- Chicken Breasts - 4 pieces, or chicken of choice
- Steamed rice - 1 cup
- Mixed Vegetables - 1 cup
- Onion - 1 small, chopped or sliced
- Rhubarb & Pineapple Sauce:
- Rhubarb - 3 cups, fresh or frozen
- Pineapple chucks - 2 cups, fresh or canned
- Corn starch - 1 tbsp
- Brown sugar - ¼ cup or more
- Sea salt - 1 tsp
- Black pepper - ¼ tsp
- Onion powder - 1 tsp
- Chicken broth - 1 cup
Instructions
In a saucepan add rhubarb, pineapples, corn starch, brown sugar, sea salt, pepper, onion powder and chicken broth, cook on a medium heat on your stove top.
Cook for about 10 minutes or until stewed or part thickened.
In a roaster with lid, layer sliced onions, top with chicken breasts or chicken of choice. Pour rhubarb sauce over chicken and cover with the lid. The last 10 minutes of cooking remove lid or foil.
Pre-heat oven to 375ºF and bake for 30 to 45 minutes, serve with steamed rice and mixed veggies of choice.
Bonita’s Tips:
Use fresh or frozen rhubarb, no need to thaw.
Use more brown sugar if you wish the sauce to be sweeter.
Check between just incase liquid bubbles out.
