RHUBARB FLUFFY CUTS

Use fresh or frozen rhubarb in this recipe, cut in small pieces and add to a saucepan with cinnamon, sugar and nutmeg.
Boil for about 5 to 10 minutes, just until stewed.
Cut in shortening by hand or pastry cutter, add milk then form into a ball.
Roll on the countertop with a dusting of flour to about 10 x 12 inches.
Now comes the tasty stewed rhubarb put about one cup onto the flat dough, then roll away from you. After cut 1 to 1½ inch pieces and place in the greased casserole pan or pan of choice.

Ingredients
- Dough:
- All- purpose flour - 1½ cups, extra for dusting
- Sea salt - ¼ tsp
- Baking powder - ¾ tsp
- Shortening - ¼ cup
- Milk - ½ cup
- STEWED RHUBARB:
- Rhubarb - 3 cups, fresh or frozen
- Sugar - ¼ cup
- Nutmeg - ¼ tsp
- Cinnamon - 1 tsp
- TOPPING:
- Brown sugar - ¾ cup
- Cold water - ¾ cup
- Butter - 1 tsp
Instructions
Sift together in a bowl flour, sea salt and baking powder, cut in shortening, then add milk mix lightly.
Turn onto a floured counter top and knead until it forms a ball, use more flour if needed.
Cut rhubarb in small pieces and add to a saucepan on a medium heat, with cinnamon, sugar and nutmeg, cook for 5 to 10 minutes until stewed.
Then lightly roll into a rectangle about 10 x 12, spread top with 1 cup of room temperature rhubarb stew. Leaving the rest to use after.
Roll up like a jelly roll and cut in 1½ inch slices, place in a greased baking pan cut side up. Then pour the remainder of the rhubarb stew over all rolls, after top with brown sugar and cold water.
Pre-heat oven to 350ºF, bake for 60 minutes.
Cover with foil wrap or lid and bake for 35 minutes covered, add butter, then bake for another 25 minutes uncovered.
Serve hot or cold! Top with thick cream or whipped cream.
