Ruby's Lemon Fluff Dessert

If you are looking for a JELLO DESSERT you are in the right place.
This recipe was given to me from my niece, this was one she would make for her family and for special events. Only a few simple steps to this recipe but it can serve as two types of recipes, one as a dessert and the other as a salad. I will explain that more to you so I don't confuse you 🙂 here in Newfoundland and Labrador we love making more for less. Having a dessert that can be a salad and serve with your Traditional Newfoundland Cold Plates and then the same recipe for a dessert much like this one. Traditional Newfoundland Orange Jelly Salad.

Ingredients
- Lemon Jello - 1 - 85g pack
- Cream Cheese - 1 - 250g pack
- Crushed Pineapples - 1 - 398ML can
- Hot Water - 1 cup
Instructions
- In a medium bowl add lemon jello, hot water and mix well.
- In another bowl add room temp cream cheese and mix until soft.
- Slowly add jello liquid and mix together, by hand or mixer, until all combined.
- Open crushed pineapples and drain all liquid, then add crushed pineapples to mixture and fold in.
- After put RUBY’S LEMON FLUFF DESSERT in fridge and let set.

I will talk a little more about Ruby’s Lemon Fluff Dessert, this reason they have called it fluff dessert was because the texture of the jello and cream cheese sets light and fluffy. This is a delicious dessert for any occasion if you are wondering what to make for your next pot luck dinner. 🙂
