Our delicious rum cake is made with a few simple ingredients and you can use a rum of choice....or replace the rum with a grape juice. Also our rum cake is covered with a homemade rum syrup!
Our rum syrup is made with brown sugar, vanilla, butter, water and rum!
This cake is made with a few simple ingredients we all have in our cupboards. Like; flour, sugar, butter, vanilla, baking powder, baking soda, salt and evaporated milk.
The RUM is up to you!
I'm using a dark rum and using ¼ cup for the cake and you can use a grape juice for that part if you can't use rum. Then i'm using ¼ cup in the rum syrup, remember the alcohol will burn off during the cooking stage.
Making the batter for this cake, can be done by hand or using your mixing.....your choice!

Ingredients
- All- purpose white flour - 3 cups
- Baking powder - 2 tsp
- Baking soda - 1 tsp
- Sea salt - ½ tsp
- Evaporated whole Milk - 1 cup, or milk of choice
- Butter or margarine - ½ cup
- Vanilla extract - 2 tsp
- Granulated sugar - ½ cup
- Eggs - 2 large
- Rum - ¼ cup
- RUM SYRUP
- Butter or margarine - ½ cup
- Vanilla extract - 1 tsp
- Water - ¼ cup
- Brown sugar - 1 cup, packed
- Rum - ¼ cup
Instructions
Prepare your bundt pan by oiling it well! Then preheat your oven to 350ºf! Bake for 50 to 60 minutes!
In a medium bowl, sift in flour, add baking powder, baking soda and salt, set aside until ready.
In another bowl add butter or margarine, sugar and vanilla, mix well for a minute or so. By hand or with your mixer….
Add one egg at a time, then pour in rum. Slowly add milk alternating with flour mixture until all ingredients are in the bowl. Mix until the batter is nice and creamy.
Then transfer into a greased bundt pan and place in the oven for 50 minutes, while waiting for your rum cake to bake, make your rum syrup.
In a saucepan add butter or margarine and brown sugar, let melt on a medium heat. Then add vanilla, rum and water. Stir until it starts to bubble, then lower heat, until the cake is almost baked for 50 minutes.
Then when the timer rings for 50 minutes, open the oven leaving the cake in the pan. Poke holes with a toothpick to give room for the rum syrup to run through the cake, use about ¾ of a cup. Keep the rest to use later.
Continue baking for another 5 to 10 minutes. Remove from heat, leaving cake in pan for about 10 minutes.
Then remove the cake onto a platter, poke more holes in the cake and pour another ¼ cup over the cake. Let cool or serve warm. Using the remainder of the rum syrup for individual slices. Top with thick cream or whipped cream and fresh fruit.

After you make the rum syrup the last 10 minutes of baking your cake open oven door, poke holes in the top of cake, then pour half the rum syrup over the top of cake and put back in the oven to bake for another 10 minutes.
