Salmon Loaf and Dill Sauce

If you like salmon you with love this salmon loaf, so soft and tasty with the right amount of seasonings and ingredients. This is a serving for 4 to 5 people if you are a family of five, also serve over a bed of steamed rice, topped with our creamy dill sauce.
After all ingredients are adding to the bowl mix together with spoon or mixer with hook, then put in a 9 x 5 inch pan or bigger, cover pan first with parchment paper for easy removal.

Ingredients
- Salmon - 1 to 2 cups, fresh or canned
- Evaporated Milk or Whole Milk - ¼ cup
- Onion - 1 small, grated
- Green onion - 1 stick, chopped
- Bread crumbs - 1 cup
- Egg - 1 large
- Celery - 1 stick, chopped
- White pepper - ½ tsp
- Sea salt - ½ tsp
- Onion powder - ½ tsp
- Mashed potato - 1 cup
- Crispy onions - ¼ cup, garnish
Instructions
Method:
First peel and wash 2 medium potatoes, add to a boiler water and boil until fork tender, drain and mash with 1 tbsp of butter or margarine.
In a bowl add all ingredients and fold together well, if you are using fresh salmon “ NO BONES” just lightly chop and add to mixture. If you are using canned salmon, open can drain liquid and check for bones before adding to the mixture.
After prepare a loaf pan, line with parchment paper and add all mixture. Then smooth all mixture in pan evenly.
Preheat oven to 350ºF and set timer to 40 to 45 minutes, then place loaf pan in oven to bake. “ Make dill sauce while waiting for salmon loaf.”
DILL SAUCE
Recipe:
2 Tbsp flour 2 Tbsp butter or margarine
1 Small onion, diced 1/2 Tsp dill, fresh or dried
1/2 Tsp sea salt 1/2 Tsp white pepper
1 Cup evaporated milk 1 Cup white wine or vegetable broth
1 Tbsp lemon juice 1/2 Tsp onion powder
Method:
In a large frying pan on a medium heat, add butter and diced onion, sea salt, white pepper and onion powder let fry for a few minutes to soften the onions.
Then add flour, continue cooking flour until its looking like a paste. Deglaze with white wine or veggie broth, continue stirring with whisk until the flour mixture starts to thicken.
Then add evaporated milk, dill and lemon juice, continue mixing and lower heat to simmer. Add more milk or broth if sauce becomes to thick, taste sauce if you like to add more seasonings to your taste that is ok. Simmer on low heat until ready to use, add more veggie broth it needed, stirring occasionally!
Bonita’s Tips: Serve with a steamed rice or veggies.
Fresh or canned salmon got hidden bones, be sure to remove any before making this meal.

Awesome recipe! I used wild caught Alaskan sockeye salmon. The loaf had great flavor and the dill sauce was an awesome “condiment”. I served with wild rice and cauliflower with carrots. The sauce was great on all of it!
