SEAFOOD CREPES

Todays recipe is for seafood crepes, we will show you how to make the basic crepes and share with you a tasty seafood sauce that taste like a bowl of seafood chowder.

Our seafood we are using is shrimp, scallops and crab meat....you can use other seafood if these are not available or to costly. You can use canned crab, shrimp or lobster, chucks of salmon or white fish. These will be lovely replacements for our seafood today!
Mix together in a bowl with a hand held whisk, eggs, milk and water....then toss in sea salt and slowly add flour but keep whisking at all times. The batter must be smooth and creamy....after add melted room temperature butter or margarine.
Have your frying pan heated to a medium to high heat.....spray the pan or add a drop of oil. Pour into the pan about ¼ cup of batter and roll it around in the pan to thin the mixture out and start to fry...
Keep making all the basic crepes until all fried, cooking them about 30 second to 1 minute of both sides and not over frying them to be to crisp. You don't want then to doughy so when you see a nice golden colour on both sides that will be good. Place on a plate with a piece of paper towel between each one.
Now! Lets make our seafood sauce!
Fry those ingredients until cooked then add milk, shredded cheese, salt and pepper, then your seafood of choice or the once we have chosen.
I always love to make the seafood sauce runny because you can dip the crepe in or make the seafood casserole for more meal ideas.

Ingredients
- SEAFOOD SAUCE:
- Shrimp - 12 to 22 each
- Scallops - 8 to 12 each
- Crab Meat - ¼ to ½ cup or canned
- Onion - 1 small, peeled and chopped
- Mushrooms - 8 each or more
- Celery stick - 1 chopped
- Shredded Cheese - 1 cup or more
- Butter or margarine - 2 tbsp
- White pepper - ½ tsp
- Sea salt - ½ tsp
- Cream or milk - 1½ cups
- Garlic - 1 clove
- Olive oil - 1 tbsp
- Parsley - 1 tsp
- Carrot - 1 shredded
- BASIC CREPES:
- All-purpose flour - 1½ cups
- Eggs - 3 large
- Milk - 3/4 cup fresh or evaporated
- Water - ½ cup
- Butter or margarine - 3 tbsp, melted and room temp
- Sea salt - ½ tsp
- Spray oil - 1 tbsp or oil of choice for pan
Instructions
Method for Seafood Filling:
In a pan on a medium heat, add butter, olive oil, chopped onion, chopped celery and shredded carrot and fry until cooked. Then add sea salt, pepper and milk or cream, mix in together.
Continue cooking until creamy, then top with shredded cheese, pressed garlic and all seafood.
Fold together and let cook for five minutes and coat with the tasty cream sauce. Lower the heat to warm and make your crepes…..
Method for Crepes:
In a bowl add large eggs and whisk together, add in water, milk and flour; whisking until combined. Continue to stir together until smooth.
Add room temperature melted butter or margarine and sea salt; continue mixing until smooth.
In a medium frying pan or pan of choice on a medium to high heat, add just a drop of cooking oil or spray oil.
Then pour about ¼ cup of crepe batter in hot pan, tilting the pan and rolling the batter in a circular motion to coat all around pan.
Start cooking crepes until it starts to brown and the batter on top is no longer wet, about 30 seconds to 1 minutes or more if needed.
Take a spatula and run around the edge of the crepe to left it a little, when it looks like it’s ready. Flip crepe over with big spatula or flip it over by tossing in the air.
Fry about another 30 seconds to a minute on the other side using more oil if needed.
Then flip out on plate, putting a piece of paper towel between each one and continue making all the crepe before adding the seafood filling to the crepe and no liquid; serve hot.
If you like to make a casserole, layer the rolled crepes in your pan and top with the leftover liquid from the seafood sauce. Top with cheese of choice, bake in a preheated oven of 350ºf for 20 or 30 minutes. serve hot and top with parmesan cheese….

If you never made or eaten crepes or seafood crepes before you are in for a wonderful treat!
Bake in a 350ºf preheated oven for 20 to 30 minutes, just to brown the cheese.
