Ingredients
- Chicken Drumsticks - 6 to 8 pieces
- DRY RUB MIX:
- Sea salt - 1/2 -1 tsp
- Black pepper - 1/2 - 1 tsp
- Onion Powder - 1/2 - 1 tsp
- Garlic Powder - 1/2 - 1 tsp
- Thyme - 1/2 - 1 tsp
- Oregano - 1/2 - 1 tsp
- Paprika - 1/2 - 1 tsp
- Brown sugar - 1/2 - 1 tsp
- Cumin - 1/2 - 1 tsp
- Oil - 1 tsp or more, for chicken rub
Instructions
1. In a large plastic bag add all dry rub seasoning ingredients and toss together.
2. Add chicken legs in a bowl and rinse in cold water, pat dry and top with oil and toss chicken legs to coat.
3. Let rest for about 15 minutes at room temperature, chicken must be thawed before use.
4. You will need a baking tray lined with parchment paper, and a small rack to place the chicken on when baking.
5. Place chicken in plastic bag giving all chicken a even rub, place on rack.
6. Pre heat oven to 375º and set timer to 30 to 40 minutes, if you are using larger pieces of chicken bake longer.
7. When baked serve with fresh veggies or side of choice.
8. This meal is a gluten free recipe and very tasty and flavourful.
Sweet potato Fries
1 Yam
Pinch salt
Pinch black pepper
Pinch garlic powder
Drizzle of oil
- Cut yam in small fry shape cuts, drizzle with some oil, then seasonings.
- Place on a baking sheet with parchment paper and bake in the oven with your chicken, checking half way through incase they are baked before your chicken.
- Golden brown and crispy.
When cooking the chicken and sweet potato fry's cook them together to save on time and energy, if the sweet potato fry's are cooked before remove from heat toss a pinch of sea salt over them and let rest.
This seasoned baked chicken is juicy and full of delicious flavour, and served with a side of sweet potato fry’s that is also lightly seasoned to taste.
I always say if you don’t believe me then make it yourself and let me know what you think about this delicious recipe, I’m using drumsticks for this recipe but if you like to use a different cut of chicken let them cook a little longer.
