Only a few simple ingredient's to make our shortcake today...one of the ingredient's is cream cheese....
This is a simple cake and the topping depends on you and what you like.

Ingredients
- Butter or margarine - ½ cup
- Cream Cheese - 1 - 250g pack
- Vanilla extract - 1 tsp
- Eggs - 2 large
- Confectioner sugar - ½ cup
- Baking powder - 1 tsp
- Baking soda - 1 tsp
- All- purpose flour - 2 cups
- Sea salt - ½ tsp
- Sour cream or plain yogurt - ½ cup, more if needed
Instructions
In a large bowl add butter, cream cheese and confectioners sugar, cream together well, then add vanilla extract and two eggs fold together. Using a mixer or wooden spoon.
Then sift together all dry ingredient’s, flour, sea salt, baking powder and baking soda, fold sour cream and dry ingredient’s alternate times with wet ingredient’s until all combined.
Preheat oven to 325ºf, grease a spring release pan or pan of choice. Line the pan with a piece of parchment paper.
Scoop all batter into the pan and spread out to the sides, give it a little tap to settle batter in pan.
Bake for 60 minutes or until toothpick cream.
When baked remove from oven let rest for 5 minutes then remove from pan unto a cooling rack.
Bonita’s Tips:
This is the type of cake you can add any topping; i.e. Strawberries, cherries, raspberries, rhubarb or icing.
Serve it with a scoop of ice-cream or whipped cream with fresh fruit. Make a homemade caramel sauce and pour over individual pieces.
Allergens
So many wonderful dessert out there to make but this one is an old fashioned recipe to a delicious cake.
Preheat your oven to 325ºF and bake for 60 minutes or until toothpick clean.
You can see a little crack on the top of the cake…no worries because it don’t change the taste. But a tray of water under the cake would have prevented the crack on the cake.

Oh my! Cream cheese and sour cream? This is a whole lot more than Aunt Idea’s recipe! (I don’t have an Aunt Ida). When you took it out of the pan? Wow! I froze strawberries and blackberries from my garden this summer. They will go well with this shortcake recipe! Thank you, Bonita and Raymond!
