SLOW COOKED BOILED DINNER

If you are looking to make a boiled dinner in your slow cooker you are in the right place!!!
This is a lovely meal and made up of fresh root veggies and cabbage.....
Boiled dinner, Sunday dinner or Jiggs dinner are all the same....the only difference is jiggs dinner years ago our elders would serve with no gravy.
The other dinners you serve with gravy and protein of choice, or you could serve it on it's own.
Anyway you serve it your family will love this meal!!!!
Cabbage, turnip, carrot, parsnip, onion and potatoes is our veggies, I'm also using salted pork ribs you can also use salted beef...
Cut the stem out of the cabbage then cut in quarters. Put in a bowl of cold water to clean and rest until ready to use.
I usually add parsnip to my soups and stews, but my mom loves parsnip in her boiled dinner so I always add it in for her. I like eating it as well, it got a nice sweet taste and it favours the pot liquor!!!
I like using different types of potatoes because people do have their preference.

Peel and put all veggies in a bowl of cold water, let soak for a few minutes or just toss veggies in it to clean any dirt off. In another bowl of cold water soak salted beef to remove some salt for ½ hour or overnight, then drain and cut it in chucks, you can part cook it first in a pot of hot water and then drain more liquid off to remove more salt……keep the salt beef water just incase you need a little more added to the slow cooker….. then add to the slow cooker including the water.
You will need a SLOW COOKER! See Jiggs Dinner video for cooking on the stove top!!
Start by adding raw or part cooked salted beef to the bottom of the slow cooker, then add peeled onion cut in half, then layer the other veggies..
Cabbage, turnip, carrot, potato and last parsnip…this veggie is optional if you don’t like or have access.
Put water in your kettle and boil, add to slow cooker ¾ way up, leaving ¼ ways from the top so it don’t boil over. But have the potatoes fully covered so they don’t turn brown….You can use the salt beef hot water to the slow cooker instead of hot kettle water….
You can use vegetable broth if you don’t use salted beef in this recipe!!! Plus 1 teaspoon of sea salt!!!
Put lid on the slow cooker and place on the counter and aways from anything for safety. Put the dial on LOW and cook for 6 to 8 hours while at work or home relaxing….
When ready to serve veggies, make a quick gravy and serve with a rotisserie chicken or left over roast or chicken from last nights supper.
QUICK GRAVY:
2 tbsp of butter 2 tbsp flour
2 cups veggie broth from slow cooker 1 tbsp chicken oxo or bouillon
1 tsp Worcestershire sauce or gravy browning
Method:
On a medium stovetop heat in a frying pan add butter, let melt for a few seconds then add flour. When melted with a whisk or spoon mix flour around pan until it looks like a paste.
Then add veggie broth, Worcestershire sauce or gravy browning, chicken oxo or beef bouillon keep mixing until gravy is a nice silky thick texture.
Serve meal hot and covered in gravy or on it's own....enjoy to the fullest!!
This is a big meal and very filling if served with a baked chicken or roast….but also very enjoyable on it’s own!!
Years ago this type of meal was make twice a week one with just the veggies and another with gravy and a baked chicken….so lovely!!

Looks delicious!! Raymond, get that smell button ready to press!! lol I have made boiled dinner in a microwave pressure cooker and it turned out awesome as well.
Here is what I did. I put the salt meat in the pressure cooker with a onion and water to the fill line. I cooked it for 2- 15 minute intervals because that is the longest time you can cook with the pressure cooker. Once that was done, I released the steam. Then I added my carrot, turnip and cabbage , cut up in chunks like you did and put it back in the microwave for another 15 min. Let the pressure release and then put my potatoes in and back in the microwave for another 15 min. So a hour later I have a boiled dinner made!!!
Oh boy! Get the slow cooker ready for a great winter meal. Pretty much it is the only time I use it. It sits on the top of the microwave so it’s handy. Thank you Bonita and Raymond. I need to look thru your soup recipes again. Marion in Oregon

Patrick’s day eve in slow cooker. It was my 1st time making the dish and I was nervous about the outcome. We used NL riblets. It was super! Our Newfoundland born guests throughly enjoyed the meal as we did.
