This recipe is one our youngest son shared with us, one he enjoys making for his family and it is a game charger from making baked potatoes.
Your main ingredient is POTATO!!!!
This is a quick and easy recipe and one you can make for a pot luck meal or family event!!!
Bacon is another ingredient that is a tasty choice of toppings to use.
Our son said he likes to make this meal a little different each time and changing it with different spices, seasonings, cheeses, or compliments.
After potatoes are boiled and fork tender, remove from water and place on a oiled pan. If you are baking in your air fryer. If you are baking in the oven use a sheet of parchment paper to line the pan.
Add the potatoes one per serving, top with olive oil, shredded cheese, a pinch of seasonings or spices of choice. Then top with green onion or chives, bake in your air fryer for 10 minutes on 350ºf or 360ºf. You can also bake in the oven on 350ºF for 10 to 20 minutes or until golden brown.
You can also grill these tasty little SMASHED POTATOES in a case iron pan or foil pan.

Ingredients
- Potato - 1 pre-serving
- Shredded cheese - as needed
- Sea salt - to taste
- Onion Powder - to taste
- Green onion or chives - 2 sticks or as needed
- Black pepper - to taste
- Garlic powder - to taste
- Sour cream - if needed
- Salsa - if needed
- Bacon bits - as needed
- Olive oil - drizzle equally over potato
Instructions
Clean potato skin with running water and course brush, one potato pre-person. Then place in a saucepan of hot water and ½ tsp sea salt to season the water and potato.
Cook potato on a medium heat only until fork tender. Then remove from water and place on a cookie sheet lined with parchment paper.
While potato is hot carefully smash the potato…..using a dish cloth cover the potato and with you hand or object push down on the potato to flatten it.
After all the potatoes you are using is smashed, season with equal amounts of olive oil, sea salt, black pepper, onion powder, and garlic powder. ( Or seasonings of choice )
Then top with shredded cheese and place in a 375ºF preheated oven for 30 minutes or until golden brown.
Also can be cooked on the BBQ or Air-fryer using your judgement of time and heat.
When baked serve with sour cream, bacon bits, salsa and green onion or chives.
Bonita’s Tips: Large potatoes will be two servings, I usually use a small or medium potato for a serving.
