STUFFED MEATBALLS

Covered in seasoned lean ground beef and rolled in a bread crumbs or crumbs of choice.
You can also stuff the meatballs with a veggie or cheese you like, but the baby stubs and yellow pearl onions and so tasty!
These stuffed meatballs are so tasty and very easy to make, plus the meals you can make with them is tasty as well.

Ingredients
- Lean ground beef - 1 pound or more
- Baby Spuds - 1 bag
- Yellow pearl onions - 12 each
- Black or White Pepper - ½ tsp
- Sea salt - ½ tsp
- Onion Powder - ½ tsp
- Stale Bread Crumbs - ½ cup
- Egg - 1 large
- Parmesan cheese - ½ tbsp
- Italian crumbs - ¼ cup or shake & bake
- Garlic cloves - 1 or 2 pressed
Instructions
Method:
In a bowl add ground beef, grated onion, pressed 1 clove garlic, ½ tsp pepper, ½ tsp sea salt, ½ tsp onion powder and egg,½ cup stale bread crumbs.
Fold together with a hand or spoon until all ingredients are equally mixed BUT not over mixed.
Then wash and clean spuds, leaving the skins on or scrub some off. Then scoop about two tbsp of ground beef mixture into your hand and add one potato spud.
Fold ground beef mixture around potato or yellow pearl onions and cover and place on a plate until all mixture is used.
Put stale finely grated bread crumbs in a bowl and add ½ tsp sea salt, ½ tsp pepper, ½ tsp onion powder, Italian spice, parmesan and toss together, or use Italian bread crumbs or shake and bake to roll stuffed meatballs in.
Then roll each meatball into bread crumbs and toss until equally covered in mixture, after placing each one on a baking pan covered with parchment paper. Continue doing this until all is done.
Preheat the oven to 375ºF and bake meatballs for 30 to 45 minutes, turning them half ways to brown both sides. After baking, remove from the oven and serve with your favourite pasta sauce, gravy, rice, pasta or in a sub.
Top with more cheese or on its own.
Bonita’s Tips: If you can’t get lean ground beef use medium and put a grate on the pan for the extra oil to drip down unto the parchment pan and pan.
Substitute any of the ingredients to your taste but staying with the recipe amounts.

The only type I have made is with tiny cheese balls inside. Onion and potato sound good.
