This is a quick, easy and tasty meal, also very affordable.
These zucchini was a gift from my brother in law, he got a seaside organic vegetable garden.
Cut the zucchini in half, long ways to open the zucchini and scoop out the insides and chop in small cubes. Sit aside to use in the filling to stuff the zucchini.
Start frying 1 or 2 pounds of lean ground beef in a frying pan with a drizzle of olive oil....
Make cheese cream sauce with 2 tbsp butter, 2 tbsp flour, drizzle olive oil, 1 cup milk, 1 cup broth and 1 cup shredded cheese.

Ingredients
- Zucchini - 1 or 2 each
- Onion - 1 large, chopped
- Lean ground beef - 1 or 2 pounds
- Shredded Cheese - 2 cups
- Onion Powder - 1 tsp
- Garlic Powder - 1 tsp
- Olive oil - 2 tbsp or more
- Sea salt - 1 tsp
- Black or white pepper - 1 tsp
- Flour - 2 tbsp
- Butter or margarine - 2 butter
- Broth - 1 cup
- Milk - 1 cup
Instructions
Clean and cut zucchini in half, long ways.
Then scoop all of the insides out, leaving the skin like a boat.
Chop the zucchini filling into small pieces, then in a large frying pan add olive oil and fry lean ground beef.
When part cooked add chopped zucchini, peel and chop onion in small pieces. Add to the frying pan, top with pepper, salt, onion powder, and garlic powder or fresh.
Fry until softened, remove from heat and place in a glass bowl, place the frying pan back on the stove top.
Then add 2 tbsp butter and olive oil, let melt, then add 2 tbsp flour and mix well. Add broth and milk and continue mixing until it starts to thicken. Add one cup of cheese and continue mixing for a few seconds.
Add ground beef mixture back to the frying pan and toss together, then equally add to zucchini boats and top with more shredded cheese, season if needed.
Preheat the oven to 350ºF and set the timer to 45 to 60 minutes, put zucchini on a baking sheet and drizzle with olive oil on a pan and over zucchini. ‘optional’ Place in the oven and bake uncovered.
Bonita’s Tips:
When baked, serve with steamed rice or side of choice and veggies.
Keeping the zucchini pulp to fry with this meal is so tasty, no waste.
