If you are looking for some lovely SUMMER PARTY FOODS you are in the right place, I have three delicious meal ideas. BACON WRAPPED SCALLOPS, COCONUT SHRIMP, POTATO SKINS to help you plan a summer party for you and your family.
I've had many requests for some summer foods to make and enjoy with family and friends, these are three delicious dishes and so easy to make. Please take a few minutes to watch our short video on step by step method of making these lovely dishes.

Ingredients
- COCONUT SHRIMP:
- Large uncooked shrimp - 1 pound or more
- Shredded coconut - 1 cup, sweetened or unsweetened
- Egg - 1 large
- Flour - 1/3 cup
- Pepper - 1/2 tsp or Pinch
- Salt - 1/2 tsp or Pinch
- Coconut oil or vegetable oil - 2 tbsp
- BACON WRAPPED SCALLOPS
- Scallops - 1 or 2 pounds fresh or frozen
- Bacon - 1 pack bacon
- Pepper - pinch as needed
- Toothpicks - as needed
- Parchment Paper - line baking sheets
- POTATO SKINS
- White potatoes - 4 medium
- Shredded cheese - 1 or 2 cups
- Green onion - as needed
- sea salt - as needed
- Black or White Pepper - as needed
- Onion Powder - as needed
- Garlic Powder - as needed
- Olive oil - drizzle for baking
Instructions
Coconut Shrimp Method:
- Start with 3 medium bowls. Combine flour, salt, and pepper in one. Beat the eggs in the second bowl. Combine and coconut in the third bowl.
- Dip the shrimp into the flour, then the eggs, and then dredge the shrimp into the coconut mixing, pressing gently to adhere. You want a lot of coconut on each shrimp. Set the coated shrimp aside on a plate as you coat the remaining shrimp.
- Add enough oil to cover the bottom of a large skillet on medium heat. Fry the coconut shrimp in batches - do not crowd them in the pan. I fried about 6-7 at a time. Flip after 2 minutes and fry the other side for 2 minutes or until golden brown. I like mine a little darker, so I fried each side for about 3 minutes.
- Place the finished coconut shrimp on a plate lined with a paper towel as you fry the rest. Serve with your favorite sweet chili sauce or an orange chili sauce (which is 1 part Thai sweet chili sauce to 2 parts orange marmalade). I've tried and it's very tasty as well.
- Sprinkle with a little chopped cilantro (optional) and serve. Leftover coconut shrimp keeps well in the refrigerator for up to 3 days.
Bacon Wrapped Scallops Method:
Line a baking sheet pan with parchment paper.
Rinse scallops in cold water and pat dry, then cut bacon strips in half.
What bacon a round each scallop and stick a tooth pick through each one after whipped.
Season with a pinch of black pepper and put in a pre-heated oven on 400º of heat.
Bake until golden brown and remove from heat, serve on a plate with a dip of choice.

If you are a seafood lover you will LOVE the bacon wrapped scallops and coconut shrimp and one is not enough, plus the potato skins are a added bonus because you do need a little more choice. I used white potatoes and it don’t matter if they are large or medium its a matter of preference. The same goes for the shredded cheese you may like all cheddar or all gouda or a blend of both, anyway you will love these tasty potato skins with sour cream.
