Fresh navel orange and zest is the main ingredient!
Crack two eggs and drop in the liquid or in a small bowl and whisk together.
Then you will need a navel orange and rinse over cold water and dry with a towel. Then grate the zest into the liquid and the juice of the full orange or ¼ cup of fresh orange juice if you don't have a navel orange.
Then in another bowl add egg white and blend until soft peeks, after add to milk mixture.
Now preheat your oven to 325ºF and set timer for 35 minute to 1 hour. Then the sunshine pudding needs to be spongy and soft in texture.

Ingredients
- White sugar - ½ cup, or sugar of choice
- All-purpose flour - 3 tbsp
- Milk - 1 cup
- Egg yolks - 2 each, beaten
- Egg white - 2 each, beaten
- Navel orange - 1 each, plus zest
Instructions
Prepare casserole dish with a light coat of butter, sit aside until ready.
Preheat oven to 325ºf and heat a baking pan quarter full of water to put casserole dish in to bake sunshine pudding.
In a medium bowl add sugar, flour, milk, juice and rind of one navel orange.
Then in a small bowl add two egg yolks and whisk, add to flour mixture and continue mixing.
In a medium mixing bowl add egg whites and mix until stiff and then fold into flour mixture.
Then pour into casserole dish. Place in the oven on baking pan with hot water, bake for 35 to 40 minutes on a 325ºf heat. Bake until golden brown, soft and spongy.
When baked remove from hot water pan and leave that in the oven to cool and serve sunshine pudding hot with thick cream or unsweetened whipped cream and fresh or frozen fruit.
Bonita’s Tips:
Use hand held mixer or whisk to blend the egg whites.
Put baking pan in the oven first and then add water, this will prevent hot water burning you.
Carefully place casserole dish with the sunshine pudding on it for better baking results.
