Today's recipe is a tasty boiler of SWEET POTATO SOUP made with a few simple ingredient's and it got a beautiful balance of spices.

Having your veggies peeled and chopped in advance, you could even do that the night before and put in a bowl of cold water until you are ready to use them is just a little prep work. It also speeds up the work involve with cooking a tasty meal for your family.
Of course I usually cry when I'm peeling and cutting onions, I have tried a lot of things. But nothing helps!

Ingredients
- Sweet potatoes - 2 medium, peel and chop
- Onion - 1 large, peel and chop
- Carrot - 1 medium, peel and chop
- Celery stick - 1 stick, chop
- Crushed tomatoes - 2 cups
- Peanut butter - ½ cup
- Vegetable Broth - 4 cups
- Garlic - 2 cloves or 1 tsp
- Ginger - 1 tbsp, peel and grate
- Cayenne - ¼ tsp
- Cumin - 1 tsp
- Sea salt - ½ to 1 tsp
- White pepper - ½ tsp
- Olive oil or butter - 2 tbsp
Instructions
Method:
Peel , clean and chop all veggies.
In a large frying pan on a medium heat, add oil or butter, diced onion and chopped carrot, let fry for 5 minutes until onions and carrots start to soften.
Add sea salt and white pepper, cumin and cayenne pepper, let cook for another minute or two. Then add chopped sweet potatoes and ginger, fold together, continue frying for another 2 minutes. Add garlic last 20 second to one minute. ( Don’t over fry garlic, it will burn )
Then transfer to boiler with lid and stirring occasional on a low heat, then add canned crushed tomatoes, peanut butter and veggie broth/stock. Let cook for 20 to 30 minutes or until ready, turn on simmer until ready to serve.
Taste soup if you need to add more seasonings or broth, top each bowl of soup with fresh or dried cilantro and crushed peanuts….
Serve with sandwich or bread rolls.
Bonita’s Tips:
Cut and cube all veggies and soak in water for 30 minutes then drain.
Use fresh or dried cilantro, garlic or ginger
Growing up in a small community here in Newfoundland and Labrador we had lot’s of tasty soups our parents would make. But their soups were usually the basic ingredient’s plus one’s I still like using sea, pepper and onion powder. But my soup here today is full of bold flavours and great for cold season on a snowy winters day….
Having the balance of peanut butter and crushed tomatoes makes this recipe so tasty.
Look at the colour of this tasty soup, the flavour is over the moon but you taste it at this point and add more seasonings or spices if you wish.
