Rolling the dough out to 1 to 1-1/2 inch thick and with a knife cut in 15 to 20 squares, then roll each one on the counter top with extra flour to take the sticky off.

Ingredients
- All-Purpose Flour - 1 cup, extra for dusting counter
- Butter or margarine - 1/2 cup, COLD
- Sea salt - 1/2 tsp
- Egg - 1 large
- Baking powder - 1 tsp
- White sugar - 1/2 cup
- Coconut - 1/2 cup
- Milk - 1 tbsp
- Jam - 2 tbsp of choice
Instructions
Pre-heat oven to 350ºF, set timer to 15 minutes, makes 15-20 cookies
In a bowl, toss flour, sea salt, white sugar, coconut and baking powder together.
Add butter and using your hand or mixer with hook, work together until it is crumbles.
In a small bowl add egg and milk beat together with fork, then add to crumbles and work together until a dough forms.
Put dough out unto the counter top, dusted with four, flatten to about 1-1/2 inches and cut out 15 to 20 pieces and roll into balls.
Place on a cookies sheet lined with parchment paper, roll all cookies first then make a thumb hole in the centre of the ball, then fill hole with jam or choice. Then place in the fridge for 15 to 20 minutes to cool the harden butter, after pre-heat oven to 350ºF and bake for 15 minutes or less.

I made these cookies today and they were wonderful. I had some Raspberry, peach, chocolate and cherries in the middle. Enjoyed making them and they are my new ‘go to’ cookie recipe!
