Baked Partridgeberry Pudding

If you are looking for a delicious homemade baked partridgeberry pudding, you are in the right place.
This recipe is a old fashion recipe with a new spin using chickpea juice to make a tasty whipped meringue.
I love baking or cooking any recipe with ingredients that are in season, this recipe is made with bright red Partridgeberries that I picked in October over by the lighthouse in Port de Grave, NL.
I like to pick my partridgeberries by the lighthouse in Port-de-Grave, NL they are so lovely and I got the lighthouse and ocean right there to look at. 🙂 Beautiful...

Ingredients
- Flour - 2 cups
- White Sugar - 1/4 cup, 2 tbsp
- Butter - 1/2 cup
- Pinch sea salt - about 1/2 tsp
- Eggs - 2 large
- Baking powder - 1 tsp
- Vanilla - 1/2 tsp
- Partridgeberries - 1/2 cup
- Chickpea Juice - 1 can
Instructions
Preheat the oven to 350°F, Prep time 15 minutes, bake time 1/2 hour covered & 1/2 hour uncoveredÂ
Method:
- In a small bowl blend on high speed the chickpea juice until it starts to peek.
- Then add 2 tbsp sugar continue beating together until soft peeks start.Â
- In another bowl mix together butter and 1/4 cup sugar until creamy.Â
- Then add one egg at a time, add vanilla.
- Sifted together flour, baking powder and salt into butter mixture leaving a small amount of flour to toss your Partridgeberries.
- After fold in your chickpea meringue into your butter, sugar and flour mixture until creamy.
- Then fold in your Partridgeberries to mixture until all incorporate, grease your pudding bowl, or a round deep pan with lid or foil wrap.
- Pour all mixture into your pan and place in a 350°F oven for one hour, half hour covered and half hour uncovered until golden brown.
BAKING TIPS:Â
- This Partridgeberry pudding is high in fibre because of your chickpea juice, Â if you don't want to use chickpea juice you can use 1 cup of evaporated milk or milk of choice.
- You can also steam this pudding in a pot of hot water, follow the recipe posted on Bonita's kitchen www.bonitaskitchen.com for boiled steamed puddings.
- Tossing partridgeberries in a 1/4 cup of flour coats them so they will NOT fall to the bottom when baking.
If your not using chick pea juice what liquid do you add
Hi Linda: Thank you for your message, If you are not using chick pea juice you can use milk, evaporated, 2% or half milk and water. This is a lovely recipe and if you don’t have partridgeberry berries use cranberries. Enjoy Bonita
How much juice is expected to come out of a can of chick peas? This is relevant if you are substituting milk?
Hi Pamela: Thank you for your message and for visiting my channel, Yes you can substitute with milk or half water. You may have to pour as needed, try a half cup first then eye ball it from there just incase you make more pudding. Enjoy Bonita
Hi I was wondering if you can wrap the pudding in two layers of plastic and put in the pot with the vegetables and salt beef? Thank you ?
Hi Renee; Thank you for your message and for visiting our channel, I’m thinking if you want to steam the pudding with your jigs dinner. You can put in a cotton pudding bag and tie it to the handle of your boiler, or put in a pudding tin and put in another boiler with a small amount of water to steam your pudding. Check on line or amazon its called steam pudding tin, but I don’t think plastic will work. I hope this helps and thank you again for your message. Bonita
Hello, can I use partridgeberry jam in place of the whole berries?
Hi Lilly. Thank you for your message and for stopping by, I’m sure you can I’ve never use it. But if you add it in after everything is mixed and ready for the pan. Just maybe dollops on top then using a knife to twist it in through.
