Traditional Newfoundland Battered Deep Fried Chicken and Chips
We don't have this meal often but when we make it I like to also make old fashion dressing also known as stuffing, and gravy. If you are going to have a comfort food day you may as well go all out, sometimes I like to make extra to have some leftovers.
Removing the skin from the chicken first before dipping it in the batter will also cut back on the amount of oil in this meal.
Ingredients
- Flour - 1 Cup
- Sea salt - 1/4 Tsp
- Sugar - 1/2 Tsp
- Garlic - 1 Tsp fresh or powdered
- Oregano - 1/2 Tsp
- Rosemary - 1/2 Tsp
- Pepper - 1/4 Tsp
- Paprika - 1/4 Tsp
- Cumin - 1/4 Tsp
- Thyme - 1/4 Tsp
- Egg - 1 large
- Milk - 1/2 Cup
- Water - 1/2 Cup
Instructions
Full Chicken:
1. Cut full chicken into pieces, then place into a large boiler and cook for about 10 minutes.
2. Half full boiler with water, then add seasonings 1 tsp salt, 1 onion cut in half, 1 tsp oregano leaves, 1 Cube of garlic, let cook in the boiling water for 10 minutes, when part cooked remove from boiler and put in a bowl let rest for 10 minutes.
Batter for Chicken:
1. In a large bowl add all ingredients and mix together.
2. Deep pieces of chicken in the batter.
3. Pre-Heat your deep fryer to 350° with oil of choice.
4. Then place three pieces of your dipped in batter chicken in oil let fry for 5 to 7 minutes or until golden brown.
5. When fried drain oil off, then place on a plate with a piece of parchment paper or paper towel to remove any extra oil.
6. After place on a rack on top of a cooking sheet, then place in a 170° oven uncovered until ready to serve.
Homemade Chips:
1. Peel 3-4 medium white potatoes then cut in to fry's.
2. In the same oil you fried the chicken start frying your chips, placing two or three hand fills into the fryer until golden brown.
3. When fried remove from fryer and place on a plate with parchment paper or paper towel to drain any extra oil from the chips. If you like to double fry your chips just let drain for five minutes then place them back into the 350° oil and cook for another five minutes, then remove.
4. You can serve them after they are fried or place on a cookie sheet and put in the oven until ready to serve.
Please note " never fry on your stove top" always use a approved deep fryer that got a lid and heat control.
Allergens
Making homemade chicken and chips is so easy to do, most of the work is cutting up the chicken. I know everyone thinks that this is a oily meal but when you make anything yourself you control the oil and the amount you need to cook.
Thats the best part about making your own food, you have the power to control how you make it.
Also when making the batter you can have more of one seasoning and less of another, but you need the egg to help make a crispy crust. You can keep a little bit of the dry ingredients out before you mix it all together to roll the chicken in before you dip it in the batter. This also helps the crust to say on the chicken and not fall into the oil and stay at the bottom of the fryer.
Have your chicken parts cooked first makes for less time in the fryer and that’s another way to cut down on the amount of oil going into your chicken.
This deep fried chicken is so crispy and juicy, don’t take my word for it you diffently got to make it for yourself.
Also to save on cost buy a full chicken and cut into pieces it’s more affordable then buying the chicken parts. These are little tidbit of information you can keep in mind when planning this meal.
Enjoy this old fashion deep fried chicken meal and if you decide to make it you can substitute white potatoes for sweet potatoe fry’s.
