Before you get starting on watching how to make this bread pudding I would like to tell you a little about myself. My name is Bonita and we started Bonita's Kitchen in June of 2014 out of my kitchen in Yellowknife NWT. In October I retired with my husband of 37 years and moved back to our province of Newfoundland and Labrador. We starting this site to help our boys learn to make homemade bread, plus my husband videoed the recipe and we posted it on Youtube.
Traditional and Non-Traditional Newfoundland and Labrador recipes for everyone to enjoy and learn how to cook a delicious meal or dessert from scratch.
Now I spend my time making delicious meals and picking fresh berries in season and visiting local farmers markets to buy freshly grown vegetables. Please take your time and watch our short video tutorial for this delicious homemade blueberry bread pudding. If you don't have fresh blueberries use freshly frozen because they are equally delicious.

Ingredients
- Blueberry bread - Pudding
- Stale Bread - 6 slices 1 inch cubes
- Eggs - 3 large
- White Sugar - 1/4 cup
- Vanilla - 2 tbsp
- Blueberries - 1 cup
- Cinnamon - 1 tsp
- Butter - 3 tbsp
- Evaporated Milk - 1 - 1/4 cups
- Caramel sauce
- Butter - 2 tbsp
- Dark brown sugar - 1 cup
- Evaporated Milk - 1/4 cup
- Vanilla - 1 tbsp
- Whiskey ( optional) - 1 tbsp
Instructions
Preheat oven to 350°F, bake 35 to 40 minutes, Makes 8-10 servings
Bread Pudding Method:
- Soak bread cubes in milk in a large mixing bowl, fold until all the milk is absorbed.
- In a separate bowl, beat eggs, sugar, vanilla, and cinnamon together. Gently stir into the bread mixture. Fold the blueberries into the mixture.
- Pour butter into the bottom of a 9 x 13 inch baking pan. Coat the bottom and the sides of the pan well with the butter. Pour in the bread mix and bake at 350°F for 35 minutes. When pudding is baked and the edges start getting a bit brown and pull away from the edge of the pan, remove from oven and make caramel sauce.
Caramel Sauce:
Ingredients:
2 tbsp, butter 1 cup, dark brown sugar
1/4 cup evaporate milk or milk of choice. 1 tbsp, vanilla
Caramel Sauce:
- In a saucepan, melt butter; add sugar & vanilla whisking to blend well.
- Cook over low heat, stirring constantly, until mixture thickens.
- (Do not allow to simmer, or it may curdle.) remove from heat and whisk in milk, whisk caramel sauce before serving, the sauce should be soft, creamy, and smooth.
BAKING TIPS:
- Best fresh and eaten the day it was made, if left overs warm in microwave and enjoy.
- Stale bread crumbs work best for this recipe.
- Fresh or frozen blueberries work will with this recipe.
- Serve with thick cream for a old fashion taste, or ice cream.
I love to cook and bake and I’ve been doing that for over 40 years, I remember when I was only 12 years old and I would cook a meal out of only a few ingredients for my best friends grandparents and they would say what is the name of this recipe and I would laugh and say this and that. 🙂
