Ingredients
- Flour - 2 Cups
- Sugar - 1 Cup
- Baking Powder - 2 Tsp
- Eggs - 2 Large
- Vanilla - 1 Tsp
- Butter - 1 Cup
- Evaporated Milk - 1 Cup
- Blueberries - 1 Cup Fresh or Frozen
- Sea Salt - 1/2 Tsp
Instructions
1. In a large bowl mix together butter, sugar until combine, then add vanilla, milk and eggs.
2. Continue mixing together until batter is fluffy.
3. Sift together 1 1/2 cups flour, sea salt, and baking powder fold into butter and sugar mixture until fluffy.
4. In a small bowl add your blueberries and 1/2 cup flour toss together until all berries are coated with flour, then fold them into your batter.
5. Pre-grease your muffin pans or put liners in them, scoop equal amounts of batter in each one until batter is all used.
6. Place in 350° to 400° oven, bake for 25 minutes or until golden brown. " it may depend on your oven" After baked place on a rack to cool, cover with cloth for 5 minutes then remove cloth and sift icing sugar powder over top of them.
I made this video recipe at Christmas time with my freshly frozen blueberries I picked in the fall, this is my favourite pass time going in the woods and picking wild blueberries. Did you ever pick your blueberries in a salt beef bucket, if not this is the way it’s done in Newfoundland we love taking our clean used beef bucket into the woods and when its full we know we had a good day. Blueberries are a very good price if you like to pick them and sell them on the side of the road, they go for $12-$15 a bucket. This is a wonderful days work if you picked six or seven buckets in a day. But for me it’s all about picking them and making something wonderful on Bonita’s kitchen. Plus blueberries is so good for you I’m sure you would all again on that one.
I’m not going to try to sell you on this blueberry muffins because anything blueberry is delicious. But making them from scratch is my favourite part they teste so much nicer. This recipe I’m sharing with you is one I’ve been using for years and I love the results.
