Traditional Newfoundland Brownies & Cream Cheese Icing

These dark chocolate brownies with Cocoa cream cheese icing is so delicious and flavourful it's hard to have only one. The inside of this brownie are moist with a burst of chocolate flavour that coats the inside of your mouth.
If you love chocolate these brownies are for you and super easy to make, this recipe is for a small batch of brownies but you can always double or triple the recipe for more, and you can put less sugar if you like.
I love making these if I'm expecting last minute company because it's so quick to make. I can have everything made and by the time my company arrives and dinner is served it will take you a couple of minutes to spread the frosting over them.
Cut the brownies as big as you like them, plus what would be nice is on the side of the brownie a scoop of ice cream or whipped cream. Anyway you serve them they will be delicious and remember to keep one or two for when you seat back at the end of your day with a glass of wine and your favourite book.

Traditional Newfoundland Old Fashion Trifle

Ingredients
- Brownies:
- Butter - 1/2 cup melted
- Sugar - 1 1/4 cup
- Cocoa Powder - 3/4 cup
- Kosher salt or Sea Salt - 1/2 tsp
- Vanilla - 1 tsp
- Eggs - 2 large
- Flour - 1/3 cup
- Cocoa Cream Cheese Icing:
- Cream Cheese - 1/2 pack
- Butter - 1/2 cup
- Vanilla - 1 tsp
- Powder Icing Sugar - 2 cups
- Cocoa powder - 2 Tbsp
Instructions
1. In medium saucepan add 1/2 cup butter start to melt on a medium heat, or microwave oven.
2. When melted remove from heat let cool for a couple of minutes. In large bowl add 1 1/4 cups of sugar, 3/4 cup of cocoa, 1/2 tsp of kosher salt or sea salt then mix together.
3. Slowly pour your melted butter into your dry ingredients, mix until all have creamed. Slowly mix in 1 tsp of vanilla then your two eggs one at a time, don't over mix.
4. Then slowly fold 1/3 cup of flour into your mixture, when completed then grease a 6x8x2 pan or pan with a piece of parchment paper. Pour all your mixture into the pan then place your pan in a pre heated oven at 325° for 15 to 20 minutes, or golden brown don't over bake.
5. When brownies are baked remove from heat place at room temperature for 1/2 hour until it's cool, remove brownies from pan unto a rack.
Cocoa Cream Cheese Icing
1. Mix cream cheese and butter together , add vanilla then slowly mix in icing sugar, Cocoa. When completed spread over your brownies then cut into 1 inch squares.
Depending on how big you like to cut your brownies will determine on the amount.
If you cut them at 1 inch squares you will have 20 brownies.
( If you like to make a bigger batch of brownies you will have to double this recipe or make two batches. enjoy)

This is a old fashion recipe and I have been making this one for years, feel free to make it your own by replacing ingredients or using less sugar or a different sugar.

I went to Newfoundland last year, an exchange program of my school, and I ate some brownies when I was there. I just loved it! Since I’ve came home (Brazil) I tried to make brownies twice or three times, but it wasn’t the same taste, not even a little! First off the brownies are good but it doesn’t make very much, the recipe could be doubled or even tripled. Next the icing recipe doesn’t tell you how much cocoa to use so I put in a 1/4 cup and it tasted good. There is a lot of icing and not much brownie but overall it’s pretty good.
Just wanted to say I gave this recipe 3 stars and it changed it to 5! Not very impressed.
