Traditional Newfoundland Chicken Liver, Onions and Brewis
This quick and easy meal for two is ready in 30 minutes or less, and very tasty. Start by frying your fat pork in cubes until its got a light brown colour, then add your onions and let them fry for 5 to 10 minutes. Then add in your chicken liver to continue frying to bring your meal together. This was a meal that I'm sure was cooked by many of our parents and grandparents over the years, some would use beef liver and some pork liver or whatever was available in hard times.
Everyone owned hard bread because of its multi uses, fish & brewis, moose & brewis and fish cakes. Some would eat hard bread only with butter and salt and pepper. These are a few links to those meals if you like to have access to them.

Ingredients
- Chicken Liver - 1 Pack any size
- Onion - 1 Large chopped
- Hard Bread - 2-3 Knobs ( soak overnight or 5 hours)
- Butter - 2 Tbsp
- Fat Pork - 1 Tbsp cubed ( optional) use oil
- Black Pepper - 1/2 Tsp
- Flour - 1-2 Tbsp
- Beef or Vegetables broth - 1 Cup or less
Instructions
Method:
1. First soak hard bread 5 hours or over night.
2. In a large cast iron pan or pan of choice, add butter and chopped fat pork, start to fried until fat pork is a light brown.
3. Then add chopped onion, and chicken liver.
4. Fry until onion and liver starts to caramelize and is golden brown.
5. Then add flour mix around then add broth, or you can just have the fried onions, liver with pork fat.
6. Continue stirring until it thickens, add more broth if needed.
7. In a small saucepan with 1 cup water boiling, add the hard bread, warm for 5 minutes.
8. Plate pieces of hard bread, then top with chicken liver and onions.

Prep-Time: 15 Minutes
Frying Time: 20 Minutes for everything.
Soaking Hard Bread: Overnight or 5 Hours.

So many ways to make this delicious meal and I’m sure there have been many people all over the world making it their way, in Newfoundland we have been all about the fat pork frying first and then adding in the onion and liver. Then having some carbs with it like hard bread call brewis, and adding it with the chicken liver and onions.
