Traditional Newfoundland Cod Pouches
I don't no about you but sometimes it's hard to know what to cook for supper, having a few quick and easy dishes to make is wonderful.
This cod meal is healthy and delicious.
The most cooked cod meal is probably deep fried cod and I love that recipe too, but sometimes you like to change it up and try different cod recipes.
This recipe is for two cod pouches if you like to make more just double or triple the recipe.
Ingredients
- Cod fillets - 2 Pieces
- Onion - 1 Medium cut in rings
- Lemon - 4 Wedges
- Sea salt - Pinches
- Black or White Pepper - Pinches
- Garlic Powder - Pinches
- Butter - 2 Tsp
- Olive Oil - As needed
- Parchment Paper - 2 sheets
- Foil Wrap - 2 Pieces
- Dill - As needed
Instructions
1- Rinse cod with cold water and pat dry with paper towel then place on a plate.
2- You will need two pieces of foil wrap and parchment paper then place the parchment paper on the foil wrap.
3- Cut the medium onion in rings, place equal amount on the parchment paper.
4- Place one piece of cod on the onions, season with salt and pepper, garlic powder, dash of olive oil then one tsp butter, squeeze one lemon wedge over top and place the lemon peel on top of cod.
5- Next step would be to fold the two sides together, foil down the top by rolling down the parchment pinching it tightly together. Then foiled the two sides the same way, after place the cod pouches on a cookie sheet.
6- Place in preheated 350° oven for 40 minutes, when completed remove from oven place the pouches on separate plates. Unwrap the pouches and slide into your plate.
Serve with side dish of choice, garnish with dill.
Allergens
This delicious cod meal is made with the simplest of ingredients but the taste is so good, this quick and easy dish will take you only 15 minutes to prepare and 40 minutes to cook. Also this meal can be prepared the night before then kept in the fridge and you can take it out the next day after work and place in a 350° for 40 minutes how easy is that.

This is two cod pouches ready for the oven, and placed on a cookie sheet. I made these with fresh cod fillets you can use frozen cod fillets but let them thaw before using them, clean with cold water and pat dry before placing them on your bed of onion rings.
Don’t be afraid of using more or different seasonings these are the traditional spices I love using and they have a lovely flavour when cooked together. Also you can top each uncooked cod fillet with dill and then wrap into a pouch and then after its cooked top again with dill and a freshly cut lemon.

A few years ago business required me to travel to Newfoundland. I didn’t know what to expect but was excited at the prospect. Within hours I was christened a Newfie at a bar on George street with Screech, and then went straightaway to dinner. Cod’s tongues with scruncheons! On my subsequent visits I tried every Newfoundland dish I could find, and took some ingredients, like bakeapples, home in my luggage. My family wasn’t impressed, but my friends were! Fortunately there is an abundance of fresh wild cod available here in Chicago, and it is reasonably priced. You have become not only my favorite TV chef, but a spiritual contact with the land out East that I have come to love. I think I’ll have some balogna stew now……
