Traditional Newfoundland Couldn'ts
This recipe is made with your left over Jiggs Dinner, most Newfoundlanders the next day would take all the left overs and cut up in small pieces and fry in a cast iron pan on there stove top.
Ingredients
- Butter - 1 tbsp
- Olive oil - 1 tbsp
- Onion - 1 medium
- Vegetable's - Left overs
- Salt beef or pork - Left overs
- Pinch sea salt
- Pinch black pepper

Couldn'ts
Means: left over Jiggs dinner you couldn't eat and the next day, for supper you would chop up your veggies and fry in a pan on your stove top.
Preheat your frying pan add 1 tbsp of butter, 1 tbsp olive oil, chop a medium onion in small pieces add to frying pan.
Fry onions until they are transparent, then chop your vegetables in small pieces and add to the frying pan. Pinch of salt and pepper.
Continue flipping your vegetables until they start to turn a light brown, at this point your can add any left over meat, ie: salt beef, chicken, or roast that you may have cooked with your Jiggs dinner.
This is optional, add left over gravy to your mixture or warm it in a saucepan to have over Couldn'ts.
This meal you would serve with mustard pickles and homemade bread covered in butter and a hot cup of black tea.
