Ingredients
- Flour - 1 Cup
- Butter - 2 Tbsp
- Baking Powder - 2 Tsp
- Milk - 1/3 Cup
- Sea Salt - 1/4 Tsp
- Onion - 1 Medium grated
Instructions
- Mix together with your hand butter and flour, baking powder and salt.
- Then grate onion into mixture and fold in milk to make a soft dough.
- Grease a pudding bowl, earthenware bowl, put all dough into it and cover with parchment paper or foil.
- Or use pudding bag and place on a grate/foil bowl/ in your boiler to steam in water.
- In a boiler add hot water to cover bottom and place a grate or foil pan in bottom then had your pudding.
- Cover boiler with pudding inside and boil for 45 minutes to hour, check centre before removing from boiler.
- When steamed remove from boiler and put on to a plate, serve with jiggs dinner or roast dinner.

Our Newfoundland culture is all about making puddings and any type of puddings, this is another way you can feed your family and have food left over. This onion pudding is not a popular pudding but it have been made by many elders over the years. It is a white pudding with only the simples of ingredients, flour, butter, baking powder, sea salt and milk everyone got these ingredients in their house. One main ingredient is onion, grated into small pieces and fold into the dough.
It tastes and smells amazing!
You could serve it with a jam or molasses or just plain butter, but you may want to give the gravy a try first. If you taste it this way you may not try it the other way, me I love puddings and any type of pudding works for me. π

I canβt thank you so much for sharing this recipe. I remember my aunt making this when I was a little girl. I believe she precooked onions before adding to pudding mixture because I remember the onions being a bit caramelized on the edges. (Polite way to say burned on edges). How do you boil it if itβs cooked in a tin? Iβm not sure I understand completely how to cook them right
Hi Jamie, Thank you for your message and for stopping by…its really a steamed pudding in boiling water. If you get to much water on the pudding it will be soggy and not be very appealing. So cook it on top of your boiler over food or in a pudding tin is boiling water. I hope this helps and enjoy it is indeed a tasty pudding.
