It pleases me to share these delicious Newfoundland dishes with you and for those of you that are Newfoundlanders and Labradorians enjoy some of your childhood meals that your mom and grandmothers would make.

Ingredients
- Broth or Water - 12 Cups
- Turkey - 2 Cups or More, chopped
- Onions - 2 Medium Chopped
- Celery - 6 Sticks Chopped
- Garlic - 3 Cubes
- Ginger - 1 Tbsp Ground or fresh ( optional)
- Black Pepper - 1 Tsp
- Sea salt - 1 Tbsp ( optional ) or 1 Cup Salt beef pieces
- Chicken OXO - 2 Cubes ( optional ) if you use water instead of broth
- Carrots - 1 Cup Chopped
- Turnip or Rutabaga - 1/4 Cup Chopped
- Parsnip - 1 Small Chopped
- Potatoes - 1 Cup of choice
- Noodles or Rice - 1/2 Cup of choice
- Savoury - 1/2 Tsp
Instructions
Method:
1- In large boiler add 12 cups of water or stock, 2 cups turkey or what you would like, start the boil on your turkey bones until all turkey meat have removed from the bones, remove all bones from pot.
2- Then add 2 cups chopped onions, 6 celery sticks chopped, 3 cubes of garlic chopped ,1 tbsp fresh ginger chopped or grated, (sea salt) optional or part cooked salt beef and pepper , 2 cubes of chicken stock, if you use water instead of broth.
3- Bring everything to a boil then add all your vegetables continue cooking for 1 hour then last 10 minutes add your noodles or rice, your choice.
4- Turn your heat down on low then let soup simmer until you are ready to serve, or remove from heat.
5- You can add fresh herbs or savoury to your soup then stir it in.
Helpful Tips:
Bottle your soup it will keep in your fridge for 7 days, this recipe will make 12 one cup bottles. You must bottle while your soup is hot, pour hot soup in your bottles seal on caps let set on counter until room temperature then store in fridge. If you like to freeze soup , after your soup have cooked let pot of soup cool to room temperature then scoop up in freezer containers , date each container store in freezer.
If you are using leftover turkey from your roasted turkey, cut off pieces to use for your soup. But if you like using the bones and dark meat boil first and remove any bones before adding vegetables.
I love making soups they are one of my favourite meals to make because to me it’s like comfort foods. Starting my soups from scratch building on those big flavours to create a delicious boiler of soup. Then having a slice of homemade bread with butter melting over it to soak up the last drop of soup in my bowl. Mmmmm
Those of you that have never made soup before this is the recipe for you and of I also have a step by step video there for you to cook along with me. You will need a boiler, ingredients and iPad or laptop to take into your kitchen and start your first homemade turkey soup.
