This is our traditional stuffing with a twist of apples and cranberries to make it festive, if you wish you can make your own stuffing for the turkey breast if you wish but I hope you give our recipe a try.
When cutting the turkey breast don't cut all the way through only part ways, then flip it over and flatten the turkey breast to place the stuffing on. Fold over and roll with the skin side up when ready to bake.
Having fresh or frozen cranberries for the stuffing and to make cranberry sauce.

Ingredients
- Turkey breast - 1 or 2 pieces
- Savoury - 1 tbsp
- Onion - 1 medium, chopped
- Apple - 1 each, peeled and cubed
- Pepper - 1 tsp
- Stale Bread Crumbs - 2 cups
- Butter or margarine - 2 tbsp
- Cranberries - ¼ cup
- Sea salt - 1 tsp
- Onion powder - ½ tsp
- Cotton thread - 2 lengths
- VEGGIES
- Potatoes - 4 medium
- Carrots - 2 medium
- Turnip - 1 small
- Onion - 1 small
- Green beans, broccoli - Big bunch
- Butter or margarine - 2 tbsp
- Flour or cornstarch - 2 tbsp
- Turkey or chicken broth - 1 cup
- Turkey gravy mix - 1 or 2 tsp
- Cream - 1 tbsp
- Brown sugar - 1 tbsp
- Sea salt - ½ to 1 tsp
Instructions
Method for Turkey:
First debone turkey breast and cut through the centre to open flat on a plate, then sit aside until ready to use.
In a small bowl add stale bread crumbs, savoury, ½ tsp sea salt, ½ tsp pepper, ½ tsp onion powder and toss together.
Then peel and chop onion, add 1 tbsp to the bowl and chop cranberries in half, then peel and cut in small cubes one apple.Â
Then toss all of them in the bowl with the other ingredients, after adding 1 or 2 tbsp butter and pinch all the ingredients together by hand or with a spoon.
Then add one cup or more of the stuffing on top of flattened turkey breast and pat down.Â
Then the end closes to you roll outward until the turkey breast is rolled and put any stuffing back inside the turkey roll that falls out.Â
After that, take a piece of the cotton thread and wrap it around the turkey roll and tie it together.
You will need a roaster with lid, add stuffed turkey breast roll, continue on to the other piece of turkey if you are making two or more.
Then add small pieces of butter inside turkey skin to have a buttery taste, a pinch of pepper, salt and onion powder.Â
Add chopped onion to the bottom of the roaster and 1 cup broth.
Preheat the oven to 400ºF and bake for 60 minutes or until done, 30 minutes uncovered and 30 minutes covered. When cooked let rest and cut in slices.
In a saucepan with water, start to boil, add 1 tsp sea salt and one small onion, then peel and chop veggies, cut carrots in slices, turnip in small cubes, potatoes in half and parsnips in chucks. Let boil on a medium heat until fork tender, steam green bean or peas for a couple of minutes before ready to use.
In a another pan add 2 tbsp butter and 2 tbsp flour and mix around, add hot turkey drippings and veggie broth from your cooked veggies, add turkey gravy mix or chicken, mix together until gravy is thickened and smooth.Â
Back to veggies, add potatoes to a bowl with butter and cream then mash, or any seasonings you like. In another bowl toss carrot, parsnip and turnip together with butter, ½ tsp pepper, 1 tbsp brown sugar and mash.Â
Bonita’s Tips: Serve turkey roll, with a helping of all veggies and topped with a nice scoop of gravy. Then a side of cranberry sauce or mustard pickles, picked beets, fresh hot rolls!

Hi Bonita, this is Gail from Ontario. Can you make turkey for two without the stuffing the same way? Neither of us eat stuffing. Suggestions?
Hi Gail: Yes for sure, just put the turkey breast in your roaster with salt and pepper, onion and 1 or two cups of broth and follow the same baking info. I would have to leave the carrot, turnip and carrot whole as I am not fond of parsnip and turnip; but my husband is. Growing up we would often have turnip that wasn’t so good, like you had mouth full of twigs. People would say they were cattle turnip. I just got turned from turnip. Nice way though of having turkey dinner for two.

Some old turnips got what my dad would call it sticks inside. That is usually in the middle of the turnip and can be cut out and just keep the turnip out around. Not everyone likes parsnips and I’m sure if you had a veggie you like more thats what you will use. The reason behind our recipe is you can make a turkey dinner for two or one and not have to make a big old turkey. Enjoy Bonita
