Ingredients
- Cooked turkey or chicken - 3 cups minced
- Cream of chicken soup - 2/3 cup
- Onion - 1 minced
- Sea salt - ½ tsp
- Pepper - Dash to taste
- Egg - 1 slightly beaten
- Water - 2 tbsp
- Fine bread crumbs - as needed
- Oil - For deep fryer or pan
Instructions
Method:
In a bowl combine turkey or chicken, onion, condensed soup, pepper and salt into a bowl and mix together until firm. Add more turkey or chicken if the mixture is to wet. In another bowl add egg and water and beat well.
In another bowl add the dry bread crumbs and first take a tablespoonful of your mixture and dip into the egg wash and then into your dry bread crumbs. Continue doing this until all of them are made, place in a plate until ready to use.
You will need a deep fryer or a deep pan with some cooking oil in it. Let heat until its around 375ºf or when you see it bubble.
Fry about 6 croquettes at a time so the fryer don’t get over crowded, fry for about 3 to 5 minutes on each side until golden brown.
You can also cook these in your air fryer for 2 to 5 minutes until golden brown.
Drain on a piece of paper towel to absorb the oil if they are fried.
Garnish with fried onions rings, if desired. Makes 12 or more.
Serve with a mushroom sauce or honey mustard dip.
Viewers Moms recipe she would make on Boxing Day with her leftover turkey. This was a recipe her Mom got from a Loblaw’s cookbook from 1946. It was the first cookbook her Mom bought when she moved to Canada from Scotland as a war bride.
