Upside Down Pineapple Bundt Cake
Where do I start to tell you how delicious this Upside Down Pineapple Bundt Cake is, first off it's not a lot of work and the end result is to good to eat. 🙂
Making a creamy batter is a very important part, don't over mix your batter and the liquid used for this cake is pineapple juice and orange juice.
Put it in the pan over the top of the sliced pineapples or if you wish to use crushed or cubed thats ok.
I'm baking this bundt cake in a silicone pan but you can use whatever pan you have or like to use. It's nice to use the bundt pan because you can dress up the cake and add more fruit and whipped cream in the middle but thats all optical.
Now! Look at this delicious Upside Down Pineapple Bundt Cake.
Let the bundt cake rest on a cooling rack for a few minutes or eat it hot, topped with freshly whipped cream.

Ingredients
- Pineapples - 1 Can any type
- Butter - 1/4 Cup
- Brown Sugar - 1/2 Cup
- Pineapple Juice - 1/4 Cup x 2
- Eggs - 2 Large
- Flour - 2 Cups
- Vanilla - 1 Tsp x 2
- Baking Powder - 2 Tsp
- Orange Juice - 1/4 Cup
- Orange Zest - As needed
- Sea Salt - Pinch
Instructions
Need: bundt pan, large bowl, 2 small bowls, whisk and large spoon, or blender
- In large bowl add butter, brown sugar then cream together , add pinch of salt ,vanilla, 1/4 cup of pineapple juice, 1/4 cup of orange juice continue mixing together.
- In a small bowl add two eggs blend together when complete fold into large bowl mixture.
Slowly blend in two cups of flour and 2 tsp of baking powder, folding all together until all mixture have combined. - Oil bundt pan and add full can of chopped pineapples 'no liquid ' then pour in all cake mixture, bake in a 350° oven for 30 to 40 minutes or until golden brown.
- When baked remove from oven place upside down on a large plate, let set for about five minutes then remove cake from pan.
Glaze
1/4 cup pineapple juice
1 or 2 Tbsp butter
1/4 Cup Brown sugar
1/4 Cup icing sugar
1 Tsp Vanilla
- In small saucepan add soft butter, brown sugar, vanilla, pineapple juice and icing sugar let boil for 5 minutes to start to caramelize.
- After drizzle some over bundt cake then leave some for single slices.
- When bundt cake have cooled pour over the glaze, when ready to serve top each piece with fresh whip cream.

Baking time: 30-35 minutes
Cooling time: 10 minutes
Total time: 1 hour
Allergens
If you are looking for a light and moist cake this is the one for you, made with pineapples and its juice and orange juice and its zest. The only pineapple in this cake is at the bottom and then flipped over it will be at the top, upside down pineapple bundt cake 🙂
I guess you can add pineapple in the batter if you like but this is the way I make it but you make it your own. 🙂
There is not a lot of work to this delicious upside down pineapple bundt cake and you can use the bender and then by hand.
NEVER OVER MIX YOUR BATTER JUST LIGHTLY COMBINED TOGETHER.
This is not a big cake but its just enough for a family of 6 when it comes out of the oven.
