Ingredients
- Tomatoes - 3 large
- Vegetable Broth - 6 cups
- Carrots - 2 or 3
- Parsnip - 1
- Bay Leaves - 2 or 3
- Potatoes - 2
- Turnip ( Rutabaga ) - 1 small
- Grated cabbage - ¼ cup ( optional )
- Garlic - 2 cloves ( optional )
- Celery - 4 sticks
- Frozen corn - 1 cup ( optional )
- Frozen peas - 1 cup
- Basil - 2 tsp, fresh or dried
- Black or white pepper - 1 tsp
- Sea salt - ½ to 1 tsp
- Onion - 1 large
- Butter or margarine - 1 tbsp
- Onion powder - 1 tsp
- Olive oil - 2 tbsp
- Thyme - 1 tsp, fresh or ground
Instructions
Add tomatoes to the mixer and blend until crushed, then peel and cut all vegetables in soup size pieces. Put vegetables in cold water for about 15 minutes or longer, except onions and celery.
Then in a frying pan with olive oil and butter on a medium heat, add chopped onion to the pan. Then add seasonings, let cook for 5 minutes. Then add crushed tomatoes and continue cooking for another 5 to 10 minutes, then add pressed garlic (optional).
In a medium boiler add vegetable broth and bay leaves, drain water off vegetables then stir in all veggies to broth, except corn and frozen peas. Let cook on a medium heat for 20 minutes.
After adding cooked onions, tomatoes and chopped celery to the boiler and continue cooking for another 10 minutes, then add frozen peas and corn.
Taste liquid if you need any more seasonings at this point add it to the boiler, turn heat to simmer until ready to serve.
Bonita’s Tips: Garlic and cabbage is optional, these are my secret ingredient’s I add to mine when making this soup.
Peel and chop veggies and put in water the night before and let soak all night.
Add ¼ cup of milk if the tomatoes are to acidic for you.
Serve with fresh dinner rolls, bread or crackers.
