WINTER SOUP - Fresh Beef Soup

Winter Soup!
This is a everyday soup that your mom or dad would make on a cold and stormy day between the months of January and March.
This soup is no different then any other soup, our elders would say this soup is to keep you warm on a cold winters day. So if you are looking to do that or just looking for a nice soup to make, just sit back with a cup of tea and watch our short video tutorial on our soup of the day!
Fresh you will need a couple of pounds of fresh beef, any type of beef or if you don't like that use what meat you enjoy eating. Then cut in small soup size pieces and add to a medium boiler with 6 cups of broth or stock or choice, if you don't have that make some with beef or chicken oxo or bovril beef extract.
Having your veggies peeled and cut in small soup size pieces and placed in cold water until ready to use, then drain water from them and follow the recipe for more details.
Use about 6 cups of broth or stock of choice to a medium boiler with soup size beef pieces and seasonings and bay leaves.

Ingredients
- Broth or Stock - 6 to 7 cups
- Onion - 1 medium, peeled and chopped
- Fresh beef - 1 or 2 pounds, of choice
- Carrots - 2 medium, peeled and chopped
- Celery - 3 or 4 sticks
- Parsnip - 1 medium, peeled and chopped
- Potatoes - 2 each, peeled and chopped
- Turnip - 1 small, peeled and chopped
- Thyme - 1 tsp, fresh or ground
- Garlic - 1 clove, pressed or chopped
- Pepper - 1 tsp, black or white
- Sea salt - 2 tsp
- Bay leaves - 2 or 3 each
- Tomato soup - 1 can, rinse can with broth
- Onion powder - 1 tsp
- Noodles or rice - 1/4 cup, (optional)
Instructions
In a large boiler add broth, thyme, pepper, sea salt and bay leaves start to boil on medium heat. Then add chopped meat of choice and let cook for 30 minutes with lid on and check and stirring occasionally.
Then peel and chop all your veggies and this is a soup where you pick the veggies that is your favourite or use the ones I’ve provided. Put all cut veggies in a bowl of cold water to soak for a few minutes while broth and meat is cooking.
When ready to add veggies drain the water off them and add veggies to boiler. Cook for another 20 to 30 minutes. Stirring occasionally, add garlic, tomato soup or paste and rinse can with water, add that to the soup as well.
When soup starts to cook again add whatever noodle or rice you like and cover let cook for another 15 to 20 minutes. Taste your soup broth between and if you need to add more salt, pepper, thyme or another spice you like add it in at this point. Stirring and lowering the heat to warm and let simmer until you are ready to serve it.
