Winter White Squares

If you are looking for a delicious batch of winter white squares, you are in the right place.
This is a no-bake recipe with a 1 to 5 minutes cooking time on the stove top to melt and cook the eggs we have in this recipe.
Use a piece of parchment paper for the bottom of the squares pan or pan of choice. After layer with graham crackers if you need to cut them to fit that's ok.
Not a lot or steps to this recipe but get ready for cookies exchange season and be the bell of the ball with these tasty little winter white squares.
Melt down in a saucepan on the stovetop, butter, sugar and vanilla, before adding the egg whisk it in a bowl with a fork and add a scoop of hot liquid to introduced the hot liquid to the egg before pouring it into the saucepan. Stirring continues so you don't scrabble the egg.
Stirring the hot syrup liquid into the dry ingredients and mixing it quick so it all gets even spread.

Ingredients
- Graham cracker crumbs - 2½ cups
- Unsweetened fine coconut - 1 cup
- Mini marshmallows - 2 cups, white
- Graham Crackers - 9 to 12 each
- Butter or margarine - ½ cup
- Sugar - ½ cup
- Sea salt - ½ tsp or less
- Vanilla extract - 1 tsp
- Eggs - 2 large
- White Icing:
- Confectioners sugar - 2½ cups, more if needed
- Butter, margarine or shortening - ½ cup
- Milk or cream - 3 tbsp
- Vanilla or almond extract - ½ to 1 tsp
- Cream cheese - 2 tbsp
Instructions
Method for squares:
In a square pan of choice, add a piece of parchment paper to bottom to prepare pan, then line pan with your graham crackers, cut to fit if needed.
Then in a large saucepan over a low heat, add butter or margarine, sea salt, sugar and vanilla. Whisk together until all ingredients are melted and ready for next step.
Then in a small bowl add two eggs, whisk together, remove two tablespoons of the hot butter mixture and pour over eggs and whisk together quickly.
Then pour into butter mixture in saucepan and continue whisking to cook for 1 or 2 minutes, you don’t want scrubbed eggs so whisk it quickly.
Remove from heat and fold in your graham crumbs, coconut and mini marshmallows, continue mixing all ingredients together and then scoop over the graham crackers in pan. Make your icing, see recipe below!!
Method for white icing:
In a mixing bowl add butter, margarine or shortening, milk, cream cheese and vanilla, mix together and slowly add the confectionary sugar until a nice soft texture. Add more milk or cream if needed.
When finished spread over the top of the winter white squares and let set for a few hours or overnight.
Cut in squares or sizes you like.
Bonita’s Tips:
Use fine coconut or blend down a large grain of coconut if you don’t have it.
Use butter and cream cheese for the icing or butter, milk or cream. This will give the icing different textures and taste. All good!!!
Use shortening to have a whiter icing.
Let set in fridge to harden before cutting the squares.
